Meat: You can use ground chicken or ground beef here. Do you want to choose a vegetarian diet instead of meat? Try adding some mushrooms and green pepper slices instead!
beans: If you don’t want beans, you can skip beans or substitute black beans for another type.
corn: You can replace the corn with another vegetable you like. Bell peppers are very useful here.
broth: If you don’t have broth, you can just use water.
What type of pasta to use
We tested this one-pot pasta with different types of gluten-free pasta and traditional wheat pasta. It’s all the same! However, you must use elbow pasta for this, because the amount of broth required depends on the type of pasta. If you use a different shape of pasta, you may need to adjust the amount of broth added.
When you make this, the recipe requires you to make pasta, as long as the package instructions require it, so be sure to check the information on the pasta package.
The magic of a pot of spaghetti
If you are not familiar with the concept of one-pot cooking spaghetti, let me explain how it works!
Usually, pasta is individually cooked in a large amount of boiling water and then drained before being used in any dishes you make. However, a pot of spaghetti can directly cook spaghetti with any “sauce” you use. In this recipe, pasta is boiled in a mixture of salsa and broth. Instead of just filling the pot with water, you add the exact amount of water to ensure that when the pasta is cooked, the remaining liquid is just enough to make the sauce.
The resulting sauce is more “creamy” because any starch remaining in the cooking liquid is left in the pot instead of being discarded when the pasta is drained. Because they are all cooked in a pot, follow the instructions and the amount of ingredients exactly to ensure that the amount of sauce left at the end is correct.
Please also note that when the pasta is cooked, the sauce may look too runny. It will thicken to the perfect amount in about 5 minutes, so be patient.

One Pot Taco Pasta

- 2 teaspoons olive oil
- 1 Onion, diced
- 2 Clove garlic, finely chopped
- 1 Pound Grass Cassowary

- ½ teaspoon Black pepper
- 1 tbsp Taco Seasoning
- 1 cup Frozen or fresh corn kernels
- 1 cup Black beans, drained
- 1 16 oz can salsa (1——½ Cup)
- 3——1/2 Cup of chicken broth, or more as needed
- 12 oz Elbow Macaroni
- 1 cup Shredded cheddar cheese
- Herbs (such as chives or coriander), edible (optional)

- Heat oil over medium heat in a large Dutch oven. Once it’s hot, add the onion and garlic and cook, stirring often until it starts to soften, about 5 minutes.
- Add the turkey and cook until there is no pink residue.
- Add salt, pepper, taco seasoning, corn, beans, salsa and broth and bring to a boil.
- After boiling, add the pasta to the pot and cook according to the instructions in the package (if the package says it will cook for 10 minutes, then cook for 10 minutes), stirring every few minutes to prevent the pasta from sticking to the bottom. If at any time, the liquid evaporates too fast, you can add more broth or water as needed. It should be reduced, but it should not be so low that it starts to burn.
- After the pasta is cooked, turn off the heat and stir in the cheese. Stir together, then let the pasta sit for 5 minutes while the sauce continues to thicken.
- If needed, garnish with fresh herbs and extra cheese, and serve!

When it starts to boil, the pasta will stick to the bottom of the pot. Be sure to stir the pan and scrape off the pasta at the bottom often.
