If you like Thai Massaman Curry, you will be happy that it has become a slow-cooked beef and rice casserole.
A few weeks ago, I added Sear the Great King Jones For my frying pan collection, regular customers here shouldn’t be surprised. The first thing I do with it is casserole.
I opened a can Massaman Curry Paste In the refrigerator, so I left the usual CRC (Chicken Rice Casserole) Make something with beef. If you are not familiar, Masaman curry is a staple food in Thailand, but it is essentially fusion.




Warm spices-usually a mixture of cardamom, cinnamon, cloves, star anise, and cumin-came to Thailand in 2017day Century traders from India and the Middle East. When these spices are mixed with ginger, coconut milk and lime juice, it is basically my ideal flavor mix, especially in winter.
Because it has a rich brown broth, I like to use beef as the main protein. Instead of the usual potatoes, I used broccoli instead (although I love carbohydrates, potatoes and rice in a casserole just feel a bit too much!) and added a lot of fried cabbage. You can easily add some green beans or carrots. Like all my one-pot rice casseroles, this one is very versatile.


Sadly, the FODMAP of most pre-made curry pastes is not low because they have a bit of garlic in them, so I did not include instructions on how to adjust this recipe. If you are not too sensitive and do not mind using a paste, just omit the broccoli and sub-potatoes or carrots.You can also find homemade paste recipes on the Internet, like I am here Green Chicken Curry Recipe.
One of my favorite things about using a cast iron skillet is that you can easily brown your protein on the stove, assemble the casserole, then transfer everything to the oven and let it simmer. Sir King A bit wider and deeper than what I usually eat, it is perfect for maximizing the crispy rice around the edges. Of course, if you don’t have an oven-proof frying pan, just transfer everything to the casserole.

Massaman curry beef rice casserole

Unlike my other casseroles, this beef massaman curry version requires some cooking stovetop before transferring to the oven.Easiest in one Heat-resistant frying pan, But if you don’t have one, once you have sautéed the cabbage, transfer everything to the casserole.

Preheat the oven to 375 degrees.

Place a big Heat-resistant frying pan overheat. Add a thin layer of oil to brown the beef, turning it once or twice until it caramelizes well. Move to the plate.

Add the cabbage and sauté over medium heat, scraping off any brown pieces from the steak, until tender, 5 minutes.

Add massaman curry paste and ginger. Cook for another minute until fragrant. Add coconut milk and stir until smooth.

Remove the pot from the heat and carefully add broccoli, pepper, green onions, stock or water, rice, cinnamon sticks (if using), fish sauce, and ½ teaspoon salt.

Smooth it into a uniform layer, then put the beef into the rice mixture and immerse it in the liquid.

Transfer the frying pan to the oven for 45 minutes, or until the rice is soft and most of the liquid is absorbed. Remove from the oven, discard the cinnamon sticks, and let stand for 5 minutes. Sprinkle with peanuts and coriander, top with lime cubes, and serve while hot.
