They are also paleo-friendly, dairy-free and gluten-free.

I like snacks that I take with me in the refrigerator. Although there are many options to buy in stores, sometimes you really just want to control the ingredients and not spend a lot of money! This is where the homemade protein bars come in! These Coconut Cranberry Protein Bars are delicious, easy to make, and require only a few ingredients!
materials needed
This is an overview of the ingredient list. Keep scrolling to see the complete recipe.
- Dried cranberries
- Unsweetened shredded coconut
- Soft jujube
- Walnut
- coconut oil
- Collagen peptide (see note below)
substitute
It is so easy to make different exchanges with this recipe. You can replace dried cranberries with another type of dried fruit (perhaps blueberries or raisins). You can replace the walnut with another nut. If you want, you can even replace coconut with oatmeal!
Different protein options
I really like the natural protein in collagen peptides, but there are a few different options to add protein to these bars. You can add:
- Odorless protein powder (I like Ritual)
- Ground flaxseed
- Chia seeds
How to make them
These homemade bars are a bit reminiscent of store-bought Larabars. It’s just a small part of the price. The good thing is that they are very simple to make at home. All you need is a food processor and a container to shape the bar. Make them:
- Add all ingredients to the food processor.
- Pulse until the mixture is mixed, sometimes it may take a few minutes.
- Prepare a small square baking pan (I used a 4×7 inch glass pan) and line it with parchment paper.
- Transfer the mixture to the prepared plate and press down until it is even and flat.
- Refrigerate the mixture until hardened, at least 4 hours.
- Cut into strips or squares!

Can I scroll these instead of making bars?
Absolutely. You can roll them into balls instead of making them into strips. The goal is to make them worth about 1-2 tablespoons.
How to store them
Store these sticks in a covered container, which can be stored in the refrigerator for up to 2 weeks. They can also be stored in the refrigerator for up to 3 months.
They are stable at room temperature, but will become soft, so it is best to store them in the refrigerator for a long time.

Look for coconuts that are made up of large pieces. If you can only find chopped coconut, you may need to add more coconut oil to get the mixture together.
