  • Cut even pieces. This ensures that the broccoli cooks at an even rate and that there are no burnt bits and undercooked chunks.
  • Do not cut the florets too thick. Thinner florets maximize brown edges.
  • Use enough oil. Don’t be stingy! The oil gives the broccoli its flavor, but it also helps the florets brown and crunchy. I recommend 2 tablespoons of oil per bunch of cauliflower. This recipe uses two, so 1/4 cup oil.
  • Each broccoli floret should touch the pot. Make sure the broccoli is spread evenly on the baking sheet, in a single layer. We want to bake it, not steam it. Use two pans if needed.
  • Add garlic at the right time. If you choose to use fresh minced garlic, it is best to add it at the end of cooking or it will burn. Add in the last 5 minutes of cooking. If you don’t want the hassle of adding it at the end, use thinly sliced ​​garlic instead.
  • Choose the best oven temperature for roasting broccoli. This oven-roasted broccoli works best when the broccoli is cooked at high heat (400 degrees Fahrenheit). It helps it get browned and crispy instead of mushy.

Yes, you can make roasted frozen broccoli. However, it may not end up being brown and crisp as it releases moisture as it bakes, but it is an option. If you roast frozen broccoli, you may need to put it in the oven for a few more minutes.

  • Minced or smashed garlic: If you don’t want to add something to the roasting process, but still want to use fresh garlic, use very thin garlic flakes instead. This can withstand the heat when roasting broccoli, so you can add it right away with the broccoli.
  • Garlic Parmesan: To add parmesan cheese to this oven-roasted broccoli recipe, just follow my recipe Roasted Broccoli and Cauliflower (You can just make it with cauliflower if you like) Or sprinkle some grated Parmesan cheese at the end.
  • lemon: For some zing, add 1-2 tablespoons lemon juice or 1 teaspoon lemon zest to a bowl before baking. Alternatively, a squeeze of lemon juice after roasting also works great.
