We also tested this with store-bought traditional bread. A loaf of bread makes a really good French toast!
In general, you can really make French toast with any type of bread! Whether it’s sandwich bread, brioche, salad bread or baguette.
For excellent gluten-free French toast, especially this old-fashioned style, use real OK Gluten-free bread, as we know, they’re not all good. I like to use Canyon Bakehouse white sandwich bread. Whole Foods also now has a great 365 brand of gluten-free classic sandwich bread.
Notes on Soft Bread
If you are using a very soft and delicate bread, such as brioche or traditional white bread, you may need to toast or let it dry first! If the bread is soft and left in the batter for too long, it will start to crack.
Most importantly, use the bread that works best for you! In an ideal world, the bread wouldn’t be pre-sliced so you could make the loaves a bit thicker than traditional sliced bread, but it’s hard to find with store-bought gluten-free bread.
The key is to use slightly stale bread. The drier the bread, the more it will absorb all the goodness. The chewier texture stands out next to the French toast batter for a more crispy texture!

For dinner-style old-fashioned French toast, you’ll find they’re actually using classic sandwich bread. Served with a French bread toast, it’s thick and great. However, the rule of thumb is to be no thicker than half an inch.

How do you make French toast that doesn’t get soggy?
Some Actually Like a wetter french toast. Fun fact: I belong to that camp! But since I know a lot of people don’t, here are a few things you can do to avoid soggy French toast:
- Use older bread. Stale bread is easier to hold next to the batter, giving French toast more structure.
- Let the excess batter drip off. Once you’ve scooped out the bread from the batter, place it over the bowl and let the excess drip off. Too much batter can cause the French toast to be soggy.

French Toast in the Oven
While I personally love the speed of this easy French toast in the skillet (and love the buttery goodness), you can actually use a baking sheet and make French toast in the oven!
- Preheat oven to 375ºF and generously grease a large rimmed baking sheet with ghee (about 3 tablespoons).
- In a shallow bowl, whisk together eggs, milk, vanilla, cinnamon and salt.
- Dip the bread slices into the egg mixture and remove the excess coating. Put the bread on the baking sheet. Repeat, adding more loaves to the pan, but leaving about 1 inch of space between the loaves.
- Bake on lower rack for 8 minutes, then flip bread and bake for 5 minutes.
- Either serve immediately with powdered sugar and maple syrup, or cool completely and store in the refrigerator.

You can serve this gluten-free French toast on its own or with your favorite toppings!

To make this cinnamon French toast recipe ahead of time, you can prepare the batter a day in advance and store it in the refrigerator.
You can also fully cook and freeze French toast! Freeze for later: Cook as directed and let them cool to room temperature. Then, line them on a baking sheet and flash freeze for 30 minutes. Once hardened, transfer toast to an airtight container or ziplock bag with parchment paper between layers and store in the refrigerator for up to 3 months. They can be heated in the toaster until heated through! Alternatively, you can heat them briefly in the microwave until heated through. They can keep for up to 3 months!

How to store
Once cooked, French toast is the best. However, if you do have leftovers, they will keep in an airtight container in the refrigerator for up to 24 hours. reheat, Microwave, or reheat on the stove to re-crisp.
