Do you remember your first date with your husband? You probably remember all the details: what you wore, where he took you, what you had for dinner…
For us, that was over ten years ago, and I remember it like yesterday. Although it wasn’t our real first date, it was the first since we decided to “officially” be a couple.
We went to a restaurant called Vic’s on the river in Minneapolis. The restaurant’s name is apt because it was my cousin Vic who first introduced us.
Oleg and I sat on a plate of walleye filled with crab and started our love story. We sat by the window looking out at the glittering lights of the Minneapolis skyline, enjoying a nice bottle of wine and talking about a storm. We all ordered the same crab fish platter, which was the inspiration for this stuffed salmon recipe.
Later, this will become our regular choice every time we visit this amazing restaurant for years to come. Not surprisingly, this sparkling memory gave me the urge to recreate healthier versions of the dishes that accompany it.

Ingredients for Crab Lemon Butter Stuffed Salmon
Crab stuffed fish is a very popular food. My husband and I loved big eyes on our first date, and other restaurants may use their specials. This recipe calls for salmon because it’s easy to find, affordable, and a good alternative to any low-carb fish meal.
Of course, you can use walleye (Vic’s!) or any fish of your choice. Another tweak to the original inspiration is the lemon butter drizzled on top. Don’t skip this step! This is the perfect complement to crabmeat fish.
If you’ve never tried lemon butter salmon (or lemon butter on any fish), you’ll know how tempting it is from the first bite.
Unlike typical crab fillings, this one has no filling (not even almond or coconut flour!). They are totally unnecessary, and without them the crab meat flavor really shines through. The great part about this is that it keeps your crab stuffed fish keto, paleo, whole30 and low carb. Also, you can easily find ingredients at the grocery store without having to buy any special flour.
Only an array of spices, a bit of mayo, a little lemon juice, and slightly sweet, almost caramelized onions enhance the flavor of this crab-stuffed salmon.
Seriously, the crab salmon filling was perfect without the filling! That means this recipe is not only paleo and low carb, it’s also gluten free. It does not contain nuts, coconut or any other flour substitutes. Sometimes simplicity really is the best way!

How to Cook Stuffed Salmon with Crab Meat
If you don’t already know how to cook crab salmon, you’re in for a surprise; it’s easy.
The first step is to saute the onions; it depends on how sweet you want your onions to be. When it starts to brown, mix your crab filling.
And, don’t be intimidated by the “stuffing” aspect of this recipe; cooking stuffed salmon with crab meat is a lot easier than you might think.
Simply mix the filling together, line it in the center of the salmon fillet, and fold it over. After you’ve done that, just brush the top with melted lemon butter, sprinkle with some salt and pepper, and you’re ready to bake in the oven.
Really, the only trick is to keep the stuffed salmon fillets folded. This is why wider fillets work best, which makes the process easier. If it really won’t stay, you can close it with a toothpick, but I’ve never felt the need to.

Make Crab Stuffed Fish in Advance
A great thing about this stuffed salmon recipe is that it can be prepared ahead of time. Gotta love an easy, make-ahead weeknight dinner idea! I do it all the time.
this is very simple. All you have to do is stuff the crab ahead of time, fold it into the salmon, and cover with foil until you’re ready to bake.
At dinner time, remove the crab stuffed salmon and place it in the oven. In 20 minutes, you’ll have your first mouth-watering lemon butter salmon!

in a pan Heat olive oil over medium heat.Add onion and saute until fragrant 7-10 minutes, until translucent and beginning to brown. (Also cook longer to caramelize if desired).

Add the garlic and sauté for about 1 minute, until fragrant.

Meanwhile, in a medium bowl, whisk together mayonnaise, fresh parsley, lemon juice, and Old Bay seasoning.

Add the sauteed onion and garlic mixture. Gently toss in the crab chunks without breaking the chunks.

Place salmon fillets on a baking sheet. Season with salt and pepper.

Arrange crab mixture lengthwise between salmon. Start with the thinner edge of the fillet and fold the long way. If the fish doesn’t want to stay folded, secure the edges with a toothpick.

In a small bowl, whisk together melted butter and lemon zest. Brush lemon butter on top of salmon.

bake 16-18 minutesuntil the fish flakes easily with a fork or the fish (not the filling) reaches an internal temperature of 130-140 degrees Fahrenheit, depending on how much you like the fish.

Sprinkle additional fresh parsley over the fish if desired. Cut crosswise to eat.
