- Xanthan Gum – This ingredient acts as a thickener and contains no gluten or extra carbohydrates in flour or cornstarch.If you’re not counting carbs, you can also use 1-2 tablespoons cornstarch (or other cornstarch substitute) instead.
Can you make healthy peach cobbler with canned or frozen peaches?
Yes, you can make sugar-free peach cobbler with canned peaches. Use two 15-ounce cans in juice (avoid the sugar-sweetened ones!) and drain. Frozen peaches may work, but will need to be thawed and excess liquid may need to be drained.

- heavy cream – unsweetened almond milk, coconut milk or other Keto Milk Alternatives It should work too, but the cream has the strongest flavor.
- vanilla extract – Use the highest quality vanilla possible.

How to Make Keto Peach Pie

- Boil stuffing. Combine peaches, besti, cinnamon, and salt over medium heat and cook until peaches are soft and liquid. Taste and adjust sweetener, adding more if needed.
- Bold. Sprinkle the xanthan gum evenly over the filling, stirring to combine and thicken.
Tip: Sprinkle with xanthan gum, don’t pour!
If poured, it will not dissolve easily and create lumps.

- Make the filling dough. Add the almond flour, Besti, baking powder, and salt to a food processor and quickly blend until smooth.
- Add butter. Pulse until crumbly.


- Finish the batter. Add remaining wet ingredients: eggs, cream and vanilla. Pulse binding.
- Spoon the batter. Pour a spoonful of the batter over the peaches. (You can leave some uncovered locations if desired.)
