For the most tender, moist, and crispy fish, I recommend medium. If you don’t have a thermometer, you can use a fork to check if the fillets tend to flake easily, but are still moist and soft on the inside.

  • Leave the skin on if you can. If your halibut has skin, you can leave it on! It helps the fish hold its shape and actually adds flavor, even if you don’t eat the skin afterward. (But don’t worry about your halibut without the skin. This recipe still works great without it – I tested both methods.)
  • Pat the fish dry. Doing this step before seasoning helps keep the fish from getting mushy.
  • Do not overcook. Cooking the fish to medium heat makes it more tender, moist and crispy. Avoid overcooking, as this fish is lean and can dry out quickly.
  • Use a meat thermometer. this Helps you quickly find the cooked temperature of your fish, so you don’t overcook it.

Storage Instructions

  • Shop: Freshly baked halibut recipes taste best, but you can store leftovers in the refrigerator for 2-3 days.
  • Reheat: Wrap the fish in foil and reheat on a sheet pan in a 275°F oven until heated through.
