I’m all for a quick quick meal of the week, but I’m also a big fan of homemade hearty meals. Especially during the colder months when you want some comfort in your belly, I think lasagna fulfills that request perfectly!
My kids always leave empty plates when we eat homemade lasagna, so not only is this a frugal meal, it’s also family friendly. I hope you enjoy it as much as we do!

Can this lasagna be frozen and eaten later?
Yes! After the lasagna has cooled, place it in a freezer-safe container and freeze for up to 1 month. I like to make them in batches and freeze them because they make a very convenient Chinese meal when you don’t have time to be stuck with cookware.
Also great to take to work if you have a microwave on site.
What to serve with lasagna?
You don’t really need anything other than this great dinner, but if you want something to eat on the side, here are just a few delicious ideas–

500g ground beef
3 x 400g chopped tomatoes
2 x brown onions, chopped
3 tablespoons tomato puree
3 cloves minced garlic
250g grated mature cheddar cheese
50g plain flour
50 g butter
500ml whole milk
olive oil
1 teaspoon oregano
1 tablespoon basil
2 x beef stock cubes
White pepper
Lasagna
method
Preheat oven to 180 degrees.
Fry the onions in a frying pan with a little olive oil until translucent. Put the chopped tomatoes in a large skillet over low heat. Once the onions are cooked, transfer them to the tomatoes.
Return the frying pan to the hob and add the ground beef. Once browned, add garlic, a pinch of pepper, and stock cubes and fry for 2 more minutes.
Add ground beef to tomatoes along with herbs and tomato puree and heat until bubbly.
Add butter to a clean pan and melt over low heat. Once melted, add the flour and whisk together. Slowly add the milk, stirring all the time. Once thickened, add 200 g grated cheddar cheese and stir until melted.
Using a large ovenproof plate, add a layer of red sauce, then a layer of pasta, and a layer of cheese sauce on top. Should be enough for three layers of pasta. Top with the remaining cheese sauce and 50 grams of cheddar and a pinch of oregano.
Bake in oven for 30 minutes or until pasta is tender (insert a butter knife in the center)
Cut into six servings and serve with salads, steamed greens and even chips.
Store leftovers in an airtight container and freeze for up to two months. Perfect for work or a quick meal on a cold day.

- 3 spoon ketchup
- 3 garlic cloves Chopped
- 250 G grated mature cheddar cheese
- 50 G plain flour
- 50 G butter

- 2 beef nuggets
- White pepper
