Ingredients and Substitutes
This section describes how to choose the best ingredients for this keto blondies almond flour recipe, the role each ingredient plays in the recipe, and substitution options. For measurements, see recipe card below.
- Besti Brown Monk Fruit Allulose Blend – Unlike other browns sugar substitute (most of which contain erythritol), this sweetener has the same flavor and moisture as brown sugar, caramelizes like brown sugar, and doesn’t crystallize. Other brands may give drying results.
- butter – I prefer unsalted butter On the salted butter because it allows me to control the salt, but you can omit the salt and use salted butter instead if desired.
- Egg – Use whole large eggs.I have not tried replacing flax eggsbut they might work.
- vanilla extract – I like this brand For the best taste.
- Wholesome Yum Almond Flour – This premium flour is bleached and milled to the finest milling so your low carb blondies won’t get rough or grainy. Do not substitute coconut flour, it will be too dry. Sunflower seed flour can be used as a nut-free alternative if desired, but will have a coarser texture.
- baking powder – Make sure to use baking powder, not baking soda.
- sea salt – Balanced sweetness.
- Walnut – These add a welcome crunch to all the chewing, but are optional.other keto nutslike pecans or hazelnuts, or even a handful Sugar Free Chocolate Chips Give keto blondies a new twist.

Tips for the Best Almond Flour Blondies
These tips will help you achieve the perfect keto-funded bob with light, voluminous texture and clean, straight strands:
- Start with room temperature ingredients. Butter doesn’t cream well if it isn’t softened, and cold eggs can curdle fluffy butter, so you want both to be at room temperature.
- Keep mixer on low to medium speed. Turning it up too high would introduce too many air bubbles, which would detract from the fudge texture we wanted.
- Do not over bake. A toothpick inserted into the center should get a little bit of batter — not completely dry or wet. This means they stay fudgey once cooled.
- Let cool completely. Warm blondes are tempting, but if you cut them too early, they will fall apart and won’t have the right texture. Cool to set them completely. (You can always reheat them after slicing if you like.)
- Slice straight down. Cut the blondie in a straight downward motion rather than dragging or sawing the knife. Wipe off the knife between cuts, as the slimy interior tends to stick to the knife.
storage instructions
- shop: Low Carb Ketogenic Blondies are best stored up to 4 days after cutting, in a single layer in a covered container. Avoid putting them in the refrigerator as this will dry them out.
- freeze: Sugar free blondies freeze beautifully! Wrap them in plastic wrap (or foil) and store in a zip-lock bag in the refrigerator for up to 3 months. Thaw on the counter before serving.
