  • Cranberry Sauce – I always let Sugar Free Cranberry Sauce For Thanksgiving, that’s what I used, but you can use any leftover canned or homemade cranberry sauce.
  • goat cheese – I’ve used a common variety here. You can also substitute real cream cheese, or even grated Parmesan.
  • Walnut – Adds a satisfying crunch to casseroles. You can have them in a nut-free option, or swap in other nuts, such as pecans.

How to Make Leftover Turkey Casserole

One of the best things about leftover casserole this Thanksgiving? It’s so versatile! In fact, the entire casserole is something I often eat that time of year. You can easily adjust the amount of each ingredient according to your own usage. Here are some ideas:

  • Turkey Stuffing Casserole – Add a layer of filling to the leftover turkey casserole, if you have some left.You can use the traditional version, or something like cauliflower stuffing.
  • Green Bean Casserole – I use regular cooked green beans and some sea salt, but by layering a classic green bean casserole (or my Low Carb Green Bean Casserole) in.
  • Ham Casserole – If you have holiday ham, you can easily throw that in instead of (or in addition to) the turkey.
  • Add starch – I keep this dish light and it’s perfect after a big holiday meal, but you can add cooked pasta, cooked rice or leftovers Roasted Sweet Potatoes Make it heartier. If you do, you may need to increase the amount of cranberry sauce and mayonnaise.

  • shop: You can store leftover casserole in an airtight container in the refrigerator for 3-4 days.
  • Meal Prep: Layer the casserole, cover, and store in the refrigerator or freezer until ready to bake.
  • Reheat: Cover the baking sheet with foil and bake at 350°F for 20-30 minutes, until warmed.
  • freeze: Assemble the casserole and store in the refrigerator for up to 3 months. (You can also store separately.) Thaw overnight in the refrigerator or bake directly from frozen.
