I first made this simple 3 ingredient Cloud Bread Recipe A few years ago, although I did many other Keto Bread and flourless bread recipe, I still make this a lot – it’s easy, fluffy, and light. Whether you call it keto cloud bread, oopsie bread, or oopsie rolls, these are all names for equally delicious low-carb bread. You just need a few commonly used ingredients, which you probably have on hand.
What is Cloud Bread?
Cloud bread, sometimes called oopsie bread, is a gluten-free, low-carb bread alternative made with eggs and cream cheese. It’s light, airy and requires no flour.
This bread has been around for years, but a recent Tiktok trend has made it popular again.Although this is keto diet, I made a small tweak that I believe makes this the best cloud bread recipe ever.But if that’s not your thing, or you think it’s eggy, try mine white ketone bread, Keto Bagels or Almond Flour Bread instead.

Cloud Bread Ingredients and Substitutions

- Egg – For correct proportions, use large eggs, not medium or large. Separate egg yolks from whites.
- cream cheese or mascarpone – Most cloud bread recipes are made with cream cheese, which you can use for this recipe, but I like to use mascarpone cheese (store bought or Homemade Mascarpone). Other popular cheese substitutes include Greek yogurt (or Keto Yogurt should work too! ), super thick coconut cream (runny doesn’t work), or sometimes thick mayonnaise.
- Cream of tartar – This optional ingredient is a powdered acid that helps stabilize egg whites, so it’s easier to beat them into stiff peaks. (You’ll find it in the baking section of your grocery store, or online here.) You can still make fluffy cloud bread without it – just make sure your egg whites are at room temperature for easy whipping.
- sea salt – You just need a little bit to keep your balance. The rolls are not salty.
How to Make Cloud Bread

- Prepare. Preheat oven. line a bakeware Use parchment paper. Lightly grease the paper (you can use butter, brush with oil, or simply use cooking spray).
- Whisk the egg whites. In a large bowl, use electric mixer (or stand mixer) Beat egg whites and cream of tartar with the whisk attachment until stiff peaks form. (This is called meringue.)
- Beat egg yolks with mascarpone or cream cheese. In a second large bowl, using a mixer, beat the mascarpone or cream cheese, egg yolks, and sea salt until smooth.


Variations: Add herbs or spices!
Combine garlic powder and dried herbs (such as italian seasoning) into the egg yolk. You can also add natural food coloring just for fun if you want a different color.
- fold. Using a spatula, carefully gradually fold the meringue into the mascarpone cheese and egg yolk mixture, being careful not to break air bubbles in the egg whites.
- scoop. Spoon mixture onto prepared baking sheet to form 6 discs.


- bake. Bake the cloud bread in the oven until golden brown.
- cool. Let the bread cool slightly on the baking sheet, then transfer to a cooling rack to cool completely before serving.


Tips for the Best Cloud Bread Recipe
- Lining the pan is crucial. Cloud bread sticks to pans easily, so line a baking sheet with parchment paper or Silicone pad. Do not use foil as the oopsie roll will stick.
- Use ingredients at room temperature. The egg whites will form stiff peaks more quickly if they are left at room temperature first. If you have cold eggs, you can let them sit in warm water for a while to help them come to room temperature. Mascarpone or cream cheese is also best at room temperature so it mixes well and doesn’t clump together. You can dice it first to soften it faster.
- Beat egg whites using cream of tartar. Just 1/8 teaspoon of cream of tartar helps egg whites reach firm peaks faster and more efficiently. Use it if you can!
- Beat the egg whites longer than you think they need to. If you don’t beat the egg whites well enough to stiff peaks, your cloud bread will fall apart and flatten. The peaks are stiff when they “stand up” when you lift the beater. They also shouldn’t move or slide out if you tilt or invert the bowl. See the photos of the step-by-step process above for a visual of what it looks like.
- Traces of fat will stop your white whip. Make sure your bowl is completely clean and don’t let a drop of yolk get into the white. If there are traces of fat, they will not form peaks.
- Use a folding action to avoid breaking down the protein. When you mix the yolk mixture and the beaten egg whites, it is critical to use the folding motion, otherwise the result will be flat. To do this, use a spatula to scoop out from underneath and “fold” the sides.
- Monitor during baking. Exact cloud bread baking times will vary based on size and thickness. Watch them closely, as they can go from done to burn very quickly.

storage instructions
- shop: Store leftover Opsie bread in the refrigerator for 5-7 days with parchment paper between slices. Do not stack them without a backing paper as they will stick together.
- Reheat: If your cloud bread has been refrigerated or frozen, reheat it in the toaster Very In short, because it burns much faster than regular bread.
Can you freeze cloud bread?
Yes, cloud bread can be frozen for up to 6 months. Freeze in a single layer on a parchment-lined baking sheet until set, then transfer to freezer bags. Thaw overnight in the refrigerator before using.
