Ingredients and Substitutes
This section explains how to choose the best ingredients for a low-carb birthday cake, the role each ingredient plays in the recipe, and substitution options.For measurements, see recipe card below.
Tomato Cake:
- Besti Monk Fruit Allulose Blend – The best sweetener for keto cakes because not only does it taste like sugar when baked, it also makes them super moist.I have made this cake before with others sugar substitute (including other brands of monk fruit sweetener), it turned out to be drier.If you need another option, you can use another granulated sweetener in the cake (such as Allulose or Erythritol). The amount you need will vary, so check my Sweetener Conversion Table.
- butter – Use any unsalted butter. This keto cake recipe has individual salts so we can use just the right amount. If you need a dairy-free option, coconut oil is a suitable substitute, but the taste and texture will vary slightly. (You’ll also want to swap out the icing for a dairy-free icing.)
- Egg – Use large eggs.
- unsweetened almond milk – you can use it store bought or Homemade Almond Milk, either way make sure it’s unsweetened.This can also be replaced by other keto milksuch as coconut milk drinks (a liquid drink in a carton, not a thick drink in a can) or diluted heavy cream.
- vanilla extract – Yellow vanilla cake is a must! But feel free to add other extracts if you like other flavors.
- Wholesome White Almond Flour – the brand I recommend as it is very delicate and bleached. Other brands vary in consistency and moisture content, so results may vary, and you should definitely avoid almond flour, which can make your cake tough.
- Wholesome Yum Coconut Flour – Like almond flour, this one is very fine and has just the right amount of moisture. Made with premium organic coconut.
- baking powder – Make sure your baking powder is fresh so your cake will rise, which tends to be harder with low carb cake recipes.
- sea salt – Balances and brings out the sweetness. Don’t worry, your cake won’t be salty.
NOTE: Yes, you need almond flour and coconut flour!

For the Cream Cheese Frosting:
- cream cheese – I recommend full-fat cheese, but any type of real cream cheese will do.
- butter – I prefer to use grass-fed butter for added nutrition and flavor, but feel free to use any unsalted butter.
- Besti Powdered Monk Fruit Allulose Blend – A powdered version of Besti for frosting. Unlike other powdered sugar substitutes, this powdered sugar is completely soluble (read: no gritty texture!) and is truly as fine as powdered sugar.
- vanilla extract

How to Make Keto Cake

- Beat the butter. In a large mixing bowl, beat together Besti Monk Fruit Allulose Blend and butter until fluffy.
- Add wet ingredients. Add eggs, almond milk and vanilla extract.
Tip: Make sure your milk and eggs are at room temperature.
Otherwise, they will set the butter and your batter will not be smooth.


- Add dry ingredients. scored Wholesome Yum Almond Flour, Wholesome Yum Coconut Flourand baking powder.
- bake. Transfer 1/3 of the cake batter to a lined springform pan and bake. Repeat for remaining 2 layers. Set aside to cool.
Tip: It’s much faster if you have three pans.
You can bake all three at the same time on the same rack, or rotate their position on the rack if they don’t fit on the same rack.


- cool. Allow your vanilla keto cake to cool completely before removing from pan and assembling.
- Make the frosting. Stir in the cream cheese and butter, Besti Powdered Monk Fruit Allulose Blendand vanilla extract until smooth.

- Mille-feuille cake. Arrange one layer on a cake stand or serving plate, then spread some frosting on top. Repeat for the other two layers. Spread frosting on top and sides of cake.
- Top with chopped pecans. A keto birthday cake with nuts on top looks prettier and I don’t have to obsess over getting the frosting perfectly smooth. However, if your icing skills are better, feel free to skip the nuts and garnish the top however you like!





storage instructions
- shop: Store the whole keto cake or any leftovers in the refrigerator for up to 3 days.
- freeze: You can freeze the cake for 2-3 months. To do this, place it on a sheet pan, uncovered, and freeze until set. Once set, wrap in several layers of plastic wrap and foil and freeze for the long term. To thaw, unwrap the layers and thaw overnight in the refrigerator.

Preheat oven to 350°F (177°C).draw a line at the bottom of a 9″ (23 cm) round springform pan and parchment.

In a large bowl, whisk together Besti and butter until light and fluffy.

Beat in the eggs, one at a time, then the almond milk and vanilla extract.

Add almond flour, coconut flour, baking powder and salt.

Transfer 1/3 of the dough to the lined pan and smooth the top with a spatula spatula. bake 18-22 minutes, until the top is light golden and springs. Repeat for another 1/3 of dough, then for final 1/3 (3 layers total).

Meanwhile, make the frosting. Whisk together cream cheese, butter, Besti powder and vanilla extract.

Allow cake layers to cool individually to room temperature before stacking. Frost between layers, and sides throughout the top and ends. Top with chopped pecans (optional), if desired.
