I didn’t know it would be easier to make a grilled cheese sandwich with very little clean up…until I made this Sheet Pan Grilled Cheese recipe.
Plus, this recipe is great for cooking for a crowd or just making a few sandwiches.

- bread: I used gluten-free sandwich bread, but feel free to use any type of bread you like.
- cheese: I use a combination of cheddar, colby jack, and mozzarella for the creamiest, cheesiest texture and perfect flavor. Either one will do, or just one!
- butter: The layer of butter on the outside of each slice is the key to that golden, crispy texture. hint: I recommend softening the butter a bit first so it spreads easily.

It’s all up to you! I use gluten-free sandwich bread for a more classic grilled cheese, but you can use regular sandwich bread, brioche, rye, sourdough, you name it.
Keep in mind that different types of bread will cook at different rates.
What’s the Best Cheese for Grilled Cheese?
I love using combinations to really round out the flavors of grilled cheese! For this recipe, I used a combination of cheddar, Colby Jack, and mozzarella cheese. It’s so creamy and cheesy and delicious!
If you want to experiment with flavors, feel free to use whatever melted cheese you like until you find the combination that works best for you! Think provolone, swiss cheese, etc.

- To prepare the bread: Spread softened butter on each side of sliced bread.
- gather:Place the bread in a single layer on the baking sheet, top with the cheese, and wrap the sandwich with another slice of bread. Then butter the top bun.
- bake: Bake the sandwiches for a few minutes, flip them over, and bake for a few more minutes, or until golden brown on both sides and the cheese has melted.








What temperature do you bake your sandwiches in the oven?
I recommend cooking grilled cheese sandwiches at 400ºF. It’s high enough that the bread turns delicious, but not so high that it burns before the cheese melts.
Tips and Dos and Don’ts for Sheet Pan Grilled Cheese
- Butter both sides of the bread. The butter adds flavor, but it also helps the bread get that beautiful golden brown and crunchy texture as it cooks. Don’t skip it!
- Soften the butter. I recommend softening the butter a bit first so it spreads easily.
- Leave space between sandwiches. We want to allow room for the heat to transfer to the bread and cheese so that the texture around the sandwich is perfect.
- Cook on the bottom rack. I recommend putting your sandwiches on the bottom rack so they have time to cook all the way through without burning and get a nice golden brown crisp.
- Check often. Every oven is different, so keep an eye on your sandwich so you don’t accidentally burn it.
- Add to: Add mayonnaise. You can spread a thin layer of mayonnaise on the outside of the sandwich if you like. I don’t think it’s necessary, but some people think it adds more buttery flavor and also acts as a barrier so the bread is less likely to burn.
