What role does butter play in brownies?
Butter serves multiple purposes in brownies. The first, and probably most obvious, is that it adds a delicious depth of flavor to the batter.
Additionally, the lactic acid in the butter reacts with the leavening agent (aka baking powder) in the brownies, resulting in a lighter texture.
Tips and Precautions
- Use extra ripe avocados. The best texture and flavor comes from fully ripe avocados. If the avocado is firm, it won’t have the same smooth, velvety texture and buttery taste.
- Grease and line a baking sheet. This makes it easier to remove the brownies from the pan when they are done.i like to create a parchment suspenders This way I can easily lift the brownies out of the pan.
- Stir in the batter. Previously, this recipe was made by pureeing the avocado in a blender and then transferring it to a bowl. Now, I like to mix everything together at once. It makes for smoother brownies and less messy dishes!
- Check for doneness. To make sure the brownies are done, insert a toothpick into the center. If it comes out clean, then they’re good to go!
Variety
