  • halibut fillets – I sear the halibut in 1 inch thick fillets. You can use halibut steaks with or without the skin, but I recommend skin on to reduce the chance of overcooking or falling apart.

How to Grill Halibut

  1. Prepare the grill. clean your grill to grill Wipe with an oiled paper towel before cooking/preheating. Preheat grill to medium-high heat.
  2. Get your seasoning ready. Stir together olive oil and lemon juice. In another small bowl, stir together the garlic powder, salt, and pepper.
  3. Season the fish. Pat the halibut fillets dry with paper towels. Brush each fillet with the lemon and oil mixture. Sprinkle the salt, pepper, and garlic powder mixture over the fish.

Place the fish on a baking sheet and season with salt and pepper.

  1. Cook the halibut on the grill. Place the fish on the grill, skin side down. Cover and bake until the edges are opaque. Flip, cover, and cook until the fish flakes easily with a fork.
  2. Let it rest. Transfer grilled halibut to a plate and let rest for a few minutes. Serve with lemon slices and a dash of fresh parsley, if desired.

How long to bake halibut?

Grill the halibut for 5-7 minutes, until edges are opaque, then flip and cook for an additional 3-4 minutes, until the internal temperature reaches 135-140°F.

Grilling halibut is a delicate process that can cause the fish to dry out or fall apart if not handled properly. Here are some tips for getting that perfectly tender, buttery texture:

  • Grease the grill. Halibut falls apart easily on the grill. To avoid this, make sure to thoroughly oil the grill grates and not flip the fish until the fish releases easily from the grates.
  • Start with the skin side down. If cooking halibut with the skin on, cook it skin-side down first. This will help protect the delicate flesh from overcooking and make it easier to flip.
  • Use a meat thermometer. Halibut can dry out easily, so be sure to monitor the internal temperature with a thermometer meat thermometer to prevent overcooking. The ideal internal temperature is 135-140 degrees Fahrenheit.
  • Do not overcook. A 1-inch fillet will take about 8-10 minutes total, while a thinner fillet might only need 6-8 minutes. As a rule of thumb, sear on high heat for about 8-10 minutes per 1-inch thick halibut (total time, not per side).

  • Reheat: Drizzle with oil and bake at 350°F for about 10 minutes, until warmed through. Alternatively, you can reheat the halibut over indirect heat on the grill, preferably wrapped in foil.
