With a delicious filling and melted cheese, it’s the perfect combination of fresh veggies and comfort food.I make stuffed zucchini recipes in a variety of ways, including Buffalo Chicken Zucchini Boats, Zucchini Taco Boatsand Zucchini Pizza Boats. They’re a great way to use up ingredients in your fridge and pantry! But this time we’re making my all-time favorite zucchini with sausage. They’re delicious, cheesy, and super easy.

Ingredients and Substitutes
This section explains how to choose the best toppings for zucchini with pepperoni, the role each ingredient plays in the recipe, and substitution options.For measurements, see recipe card below.
The filling for this recipe is very similar to mine Stuffed Banana Peppers:
- zucchini – This stuffed zucchini recipe works for any size zucchini, but you may need to adjust the amount of stuffing if your zucchini are very small or very large.you can also use yellow pumpkin!
- olive oil – for roasted squash. You can use any neutral oil, such as avocado oil.
- sea salt – I don’t see the need to add black pepper as the sausage is already delicious, but you can add a little more to the zucchini if you like.
- onion – You can use yellow, white or sweet onions. Red onions would work too, but the spicy flavor is less than ideal in this dish. Red bell peppers make a great addition – sautéed with onions if you want to add them.
- Italian Chopped Sausage – I used pork sausage, but you can also use ground turkey, ground beef, ground chicken, or simply ground pork. My sausage had enough heat on its own, but if you want more, you can add some red pepper flakes.if you have any left Instant Pot Chicken Breastsyou can chop it up and use it.
- garlic – Fresh garlic cloves taste best, but you can use a teaspoon if you’re in a hurry canned garlic Instead, or just stir 1/2 teaspoon of garlic powder into the filling.
- diced tomatoes – These add moisture, sweetness, flavor and texture to the zucchini filling. You can use canned crushed tomatoes instead, Italian Tomato Sauceketchup, salsa dancing In order to bring different flavors, Roasted Red Peppersor just chop some fresh tomatoes.
- parmesan cheese – This goes inside the filling.i used pre-grated Parmesan cheese For convenience, but tastes better fresh.
- italian seasoning – You can use store bought or make your own italian seasoning 5 minutes later. If you don’t have all the herbs needed, you can substitute any combination of dried basil, oregano, thyme, or rosemary. Fresh herbs, such as fresh oregano or basil, also work well, but need 3 times the amount because they don’t have as strong a flavor as dried herbs.
- mozzarella cheese – Gooey, melting ingredients! I love mozzarella here, but feel free to use any shredded cheese you like.

How to Make Zucchini Stuffed Boats

These instructions are for sausage stuffing, but you can follow the same process for a variety of zucchini stuffing recipes:
- Grilled zucchini. Cut the pumpkin into very long pieces and with a knife melon player Or scoop out the zucchini flesh with a spoon.place zucchini in large baking dish or lining bakeware, cut side up. Drizzle with olive oil, sprinkle with sea salt, and bake until soft.
- Fried onions. Heat more olive oil in a pan large frying pan Use medium-high heat. Add diced onion and sauté until browned.
- Brown the meat. Add the sausage (or other ground meat) to the skillet. Cook, breaking it up with a spatula, until browned.


- Saute the garlic. Make room in the center of the pot and add the minced garlic. Saute until fragrant, then stir in the sausage.
- Add other filling ingredients. Add diced tomatoes, grated Parmesan and Italian seasoning. Adjust salt to taste, if needed.
- Stuff the zucchini in. Dry the squash with paper towels. Add filling to zucchini boats.


- bake. Sprinkle shredded mozzarella cheese over the zucchini filling. Bake until cheese melts.

Tip: You can bake them at the end if you like.
If you want the cheese to be darker, put it under the oven for a few minutes.
storage instructions
- shop: Store leftovers from this baked zucchini recipe in an airtight container in the refrigerator for up to 4 days.
- Meal Prep: Cook the filling and prep the zucchini ahead of time and store in the refrigerator for up to 3 days. Assemble and bake the stuffed zucchini boats just before serving.
- Reheat: Reheat in a 350°F oven or microwave.
- freeze: Place the zucchini boats on a parchment-lined baking sheet and freeze until firm, then transfer to a freezer bag or airtight container and freeze for up to 3 months. Best thawed overnight before reheating, but can also be baked frozen. Zucchini will be a lot softer when frozen, but still delicious!
