    Ready to turn your pancake mix into pancakes? Here are some of my best tips:

    • Do not overmix the batter. Over-mixing can create a denser texture. For light, airy pancakes, simply mix the batter until just combined.
    • Grease and preheat pan. Grease a pan with a little oil or butter and heat over medium heat, then add the batter. This creates the perfect golden brown color and makes the edges nice and crispy.

    Tips and Notes

    • Do not change the flour. Different gluten-free flours absorb moisture in different ways. Therefore, I definitely do not recommend using other gluten-free flours in place of almond and tapioca flour in this recipe.
    • Use fresh baking powder. This is especially important if you plan to store your mix for a while. If the baking powder is expired, then it won't be able to do its intended purpose – make your pancakes nice and fluffy!
    • Mix well. You want to make sure the dry ingredients are all mixed in and evenly distributed to get the perfect pancake batter.
