But I learned the wonders of buttered chicken Alfredo from my college boyfriend, who throughout my history was known for eating mostly the white stuff off the kid’s menu.
Once I gave up gluten and stopped adding heavy cream to my pasta, I actually found that I enjoyed these dishes more. This light, dairy-free Chicken Alfredo is just as creamy as the original, but it's got a lemony brightness that won't make you feel like you just ate a brick.

How to Make Gluten-Free Chicken Alfredo
The problem with most alfredo sauces in restaurants is that they use regular flour to make the sauce and then heavy cream to make the sauce creamier.
Luckily, we can get the same results without dairy, gluten, or nuts. My secret? Sunflower seeds! Once soaked, they become creamy like cashews in the sauce.












To make this dairy-free chicken alfredo, you'll first follow this recipe Gluten Free Alfredo Sauce. I've included seamless instructions in the recipe below, but you'll need to print out the sauce recipe first.
Once the Alfredo is made in the blender, you can use the same pan to roast the chicken, sauté the broccoli, and toss the pasta with the creamy dairy-free sauce.












If you don't want green vegetables lurking in this dish, just omit the broccoli. But as you know, I add as many plants as possible to my dishes make them a complete Gluten Free Chicken Dinner. Another option is to use sautéed spinach or toss some frozen peas into the hot pasta when tossed with a gluten-free sauce. Or go with all of the above! More vegetables are always merrier.








This gluten-free chicken Alfredo may also be lower in FODMAPs if you omit the garlic and scallions from the sauce. The portion size of broccoli is adequate and there is no dairy or gluten in the recipe!

20 Minute Chicken Alfredo (Dairy + Gluten Free)

- 1 cup Dairy-Free Alfredo Sauce See recipe link
- 2 spoon Olive oil or vegetable cream I like this brand
- 1 pound Boneless skinless chicken breast Cut into 1-inch cubes
- sea salt
- 1 Leek Only the white and light green parts, washed and cut into half-moon slices
- 1 small head broccoli Cut into florets (about 2 cups)
- 1/4 cup white wine or chicken broth
- 12 ounce Gluten-free lasagna or linguine I like this brand
- 2 spoon chopped parsley or chives

Bring a large pot of salted water to a boil.

Heat oil or dairy-free cream in the same skillet over medium-high heat. Put the chicken pieces into the pot and add plenty of salt. Cook, turning occasionally, until cooked through, 7 to 10 minutes. Remove to a plate. While the chicken is cooking, prepare the broccoli and leeks.

Add the broccoli to the unwashed skillet, along with any additional olives or cream desired. Cook leeks and broccoli over medium heat until light in color, about 3 minutes. Season lightly with salt, add the wine or stock to the pan, and cook for another 2 minutes, until the liquid is reduced and the broccoli is fork-tender but still al dente. Place in pot and set aside.

Cook pasta according to package directions. Reserve 1/3 cup of pasta water and drain in a colander. Add the drained noodles directly to the pot along with the broccoli. Toss with cooked chicken and dairy-free alfredo sauce. Add some pasta water as needed to loosen the sauce. Garnish with parsley and serve.
