Green Goddess is a rich, creamy vanilla dressing that originated at the Palace Hotel in San Francisco in the 1920s. With so many fresh ingredients, it became a healthy addition to salads in the 70s and 80s.

Green Goddess tastes a lot like Caesar dressing, but more herbal. It’s perfect for brightening up salads, meat dishes or simple vegetable dips!

- mayonnaise – I recommend Homemade Avocado Oil Mayonnaise, but any store-bought variety will do. You can lighten the dressing further by substituting it for greek yogurt, but I prefer it with some mayo in it.
- sour cream – Adds soup and creaminess. You can also use Greek yogurt, buttermilk (though it will turn out thinner), or 1/2 a large avocado as dairy-free options.
- fish sauce – Don’t be intimidated! Anchovies are a classic ingredient in every Green Goddess salad dressing recipe, and the dressing creates a savory (not fishy) flavor. You can also use 1 to 1 1/2 cans of anchovy fillets or capers.
- lemon juice – Fresh lemons work best here, but you can also use bottled lemons. You can substitute other acids, such as white wine vinegar, lime juice, or apple cider vinegar, if desired.
- minced garlic cloves – Again, fresh is the best!
- fresh herbs – This recipe uses chives and parsley, but you can also use any combination of tarragon, scallions, basil, parsley, cilantro, dill, or mint. However, the herbs must be fresh – not dried.
- spices – All you need for this dressing is sea salt and black pepper, but you can also add a little paprika (or fresh jalapeños!).

To make homemade green goddess sauce, simply put all the ingredients in a blender or food processor and blend until smooth. Adjust salt and pepper to taste. It’s very simple!
