The exact ingredients can include many different things, but it always includes the seasoning – that’s my take on the rest. This is the perfect dish when you want a refreshing twist from a salad with olive oil and vinegar dressing.

When cooked, chop or mash. Store-bought bacon bits can also be used in a pinch, but the flavor is much worse.
  • Green Goddess Salad Dressing – A sauce that goes with anything – also a must for this salad! This bright, fresh recipe uses fresh herbs like parsley and chives, sour cream, mayonnaise (or Greek yogurt), lemon juice, anchovy sauce, garlic, salt and pepper. You can also substitute any other herb you like, such as tarragon, scallions, basil, cilantro, dill, or mint.
  • mixed vegetables – Use your favorite leafy greens! Bib lettuce, romaine, kale, or spring mixes are all easy options. (I used a spring mix!)
  • watermelon radish – These add flavor and color. If you haven’t heard of them before, they’re a root vegetable related to arugula, broccoli, and radishes, with a pale green rind and a bright pink interior (reminiscent of watermelon). Sweeter and milder than regular radishes, this radish is in season in winter despite its bright color. If you can’t find a watermelon variety, you can also use regular carrots.
  • cucumber – More green and crunch. I use small cucumbers for less dicing (just cut into circles), but large cucumbers cut into half or quarter crescents will work too.
  • onion – I prefer the taste of red onions in salads, but any variety will do.
  • avocado – Choose soft, ripe avocados for creamy, healthy fats. I cut mine very thin, but you can also cut it into smaller pieces if you want.
  • Nuggets – These shelled pumpkin seeds make your salads extra crunchy! You can also substitute with your favorite nuts or seeds.
