Flourless Pizza Crust Ingredients
This section explains how to choose the best toppings for a mozzarella pizza crust, the role of each ingredient in the recipe, and substitution options. See recipe card below for measurements.
For the cheese rind:
- mozzarella cheese – Use a pre-shredded variety or shred your own low-moisture part-skim mozzarella cheese. Do not use fresh mozzarella cheese that is too high in moisture.
- parmesan cheese – Asiago or Romano cheese should work too. I used shredded but grated should work too.

- Italian seasoning – make Homemade Italian Seasoning In minutes, or get a store-bought variety.
Variation: Try substituting 1/2 teaspoon garlic powder and dried oregano for Italian seasoning.
Any dried herb or spice that tastes good in a regular crust can be used here.

- Tomato Pizza Sauce – This is my favorite pizza tomato sauce and it’s ready in just 2 minutes.

How to Make Cheese Crust Pizza
This section shows how to make an egg and cheese keto pizza crust, with step-by-step photos and details about the technique. See the recipe card below for full instructions.
- mix. Add all crust ingredients to food processor And pulse until combined. (You can also try stirring in a medium bowl, but the texture won’t be as good. If you choose this option, it’s best to use grated cheese instead of shredded cheese.)
