Easy Buff Chicken Pasta Salad Recipe
Summer is pasta salad season. This Buffalo Chicken Pasta Salad is one of my favorites! It’s perfect for a simple side dish for lunch, dinner, or a snack from the fridge every time you pass by. 😉
This easy pasta salad recipe features the perfect mix of pasta of your choice, fresh vegetables, and shredded chicken, all tossed with a homemade spicy buffalo dressing. Here’s a healthier version that’s quick, easy, and delicious!

materials needed:
- Cooked Pasta: Any pasta shape will do. Try rotini, macaroni, bow tie, macaroni, you name it!
- vegetable: Chopped or chopped carrots, cooked corn, diced bell peppers, diced green onions. See below for other ideas!
- coriander: Chopped cilantro adds a delicious freshness to the mixture.
- chicken: leftovers chicken shreds Or a shortcut…roasted shredded chicken!
- Mayo: I use avocado oil mayo, but any type of oil will do.
- Hot Sauce: I like to use Frank’s hot sauce, but use your favorite variety!
- seasoning: mixed Fine sea salt, black pepper, and garlic powder take the flavor to the next level.

How to Make Buffalo Chicken Pasta Salad
This pasta salad with chicken comes together quickly as long as you can cook pasta and chop up vegetables. So easy and so delicious!
- To cook the pasta: Cook pasta according to box instructions. Cool completely.
- Combine: In a bowl, combine all the vegetables, cilantro, chicken and cooled pasta.
- Add the sauce: Whisk together mayonnaise, hot sauce, and seasoning, then pour mixture over pasta. Adjust seasonings as needed, then serve or store in the refrigerator.

- Make it tacky. Sprinkle with crumbled blue cheese and it’s perfect!
- Add other vegetables. Try chopped grape tomatoes, chopped celery, chopped red onion, or chopped avocado.
- Make it vegan. Just omit the meat or add a can of chickpeas to make up for it.
- Make it vegan. Swap regular mayo for vegan mayo and use chickpeas instead of chicken.

Pasta salad is the perfect summer side dish or main course. Delicious on its own or with any of your favorite summer recipes!
Enjoy it in the BBQ area next to some Roasted Corn on the Cob or as a side dish, without the chicken, on the side Air Fried Salmon, Buffalo Chicken Burgers, Grilled Pork Chops or dry rub grilled wings.
Can you make pasta salad ahead of time?
you can! This chicken pasta salad gets better in the fridge, so I like to make it a few hours in advance to give the flavors time to soak in the veggies and pasta.
If you want to prep ahead, I recommend precooking the pasta, chopping up all the vegetables, making the sauce ahead of time, and storing them separately in the fridge for a few days. When you’re ready to serve, mix them up and you’re ready to go!

How long does pasta salad last in the refrigerator?
Once assembled, this pasta salad will keep for up to 3 days in an airtight container in the refrigerator.
Can you freeze pasta salad?
I do not recommend freezing this pasta salad. The texture of fresh vegetables will suffer, and the mayonnaise will separate and become watery when thawed.

- 1 cup shaved or chopped carrots
- 1 cup cooked corn
- 1 cup diced green pepper
- 1 cup diced green onion
- 1/2 cup chopped cilantro
- 4 cups Shredded chicken (self made or kebab shop)
- 3/4 cup Avocado Oil Mayonnaise
- 1/2 cup hot sauce (I like Frank’s)
- 1/2 teaspoon fine sea salt
- 1 teaspoon Black pepper
- 1 teaspoon garlic powder
instruct
- Cook pasta as directed, drain and set aside.
- Combine all vegetables, chicken and pasta in a large bowl.
- In a small bowl whisk mayo, hot sauce, salt, pepper, garlic powder.
- Pour the sauce mixture over the pasta and toss to coat.
- Taste and adjust salt and pepper as needed. Serve immediately!

vegetarian: Use vegan mayo and omit the chicken.
