What is a Chef’s Salad?
A chef’s salad, sometimes called a chef’s salad, is an American-style salad made with deli meats, cheese, tomatoes, cucumbers, hard-boiled eggs, and vegetables. Its origins are debated, but some say it was invented in the 1940s by chef Louis Diat of the Ritz-Carlton in New York City [*].
Some classic chef’s salad recipes include croutons and top them with chef’s salad dressing made with sugar, but this is a healthier version without sugar or bread.

Chef Salad Ingredients and Substitutes
This section explains the ingredients in Chef’s Salad, the role of each ingredient in the recipe, and substitution options. See recipe card below for measurements.
- lettuce – I prefer to use romaine lettuce, but iceberg lettuce or any other vegetable will do. Finely chop before serving.
- crazy – Cut the ham into bite-sized pieces. (Chopped cooked bacon Also delicious! ) If you don’t eat pork, you can use turkey instead.
- tomato – Any small tomato, such as cherry or grape tomatoes, will work well. Cut these in half. If you only have the large ones on hand, you can chop them up.
- cucumber – Cut them into quarter moon shapes.
- cheese – I used a combination of cheddar and swiss, but feel free to use any cheese you like. (Provolone is another commonly used.) Authentic chef salads usually have cheese cut into cubes, but you can also use shredded cheese if you don’t have cubes on hand.
- fully boiled egg – I recommend This Perfect Way to Boil an Eggonce cooled, use egg slicer.
- Thousand Island Salad Dressing – I use homemade Sugar Free Thousand Island Sauce, but any type you like will do. If you are not a thousand island fan, ranch dressing, green goddess, Honey Mustard Sauceor blue cheese sauce is a good choice. (This salad works best with a creamy dressing, but a vinaigrette will work if you like.) If your dressing is a bit bland, you can season with salt and pepper.
Variety:
Try adding sliced or diced avocado, grated carrots, thinly sliced radishes, or chopped celery.
