- rum – Most pina colada drinks use white rum or golden rum. You can also use coconut rum, but be aware that it will add sugar.
- coconut cream – You can find plain canned coconut milk at many stores, or chill a can of coconut milk in the refrigerator overnight and scoop out the thick and creamy portion. (Or, just use whole coconut milk – it won’t be as thick, but still delicious!) Avoid canned “coconut cream” in this recipe, which adds sugar and a different texture.
- Pineapple chunks – Use fresh cut pineapple or frozen pineapple for best taste. Canned pineapple is fine if you have to, but the flavor won’t be as bright.
- Pineapple Extract – I like to use it for a pineapple flavor, but you can also omit it and simply add more fresh pineapple. (I only use 1/4 cup of pineapple per drink to keep it lean, but you can double or double it and skip the extract if you prefer.)
- sweetener – Sure, you can use regular sugar, but it won’t be too skinny. 😉 I use Besti Luo Han Guo Powder Allulose Blend, which keeps this slimming coke sweet, but sugar-free! Unlike other sugar substitutes, it dissolves easily in this drink and has the same sugar-like taste with no aftertaste. You can also use maple syrup, or simply omit the less sweet drink.
- ice – Helps thicken and keep your drinks cold.
