- mango – Ripe mangoes work best, so they are soft and easy to slice. Peel and dice.
- tomato – I use Roma tomatoes because they are easy to find and have fewer seeds than other varieties, but any tomato will do. Remove the seeds and chop.
- shallots – White onions will work too. diced.
- fresh coriander – A classic for salsa, but if you’re not a fan, you can skip it or use other fresh herbs. if you chop it up. I don’t recommend using dried herbs in salsa, but if you have to, use a teaspoon of dried instead of each tablespoon of fresh.
- lime juice – This mango salsa has so few ingredients that fresh lime juice tastes best. Lemon juice can be substituted in a pinch, but lime juice is better for the salsa flavor.
- Sriracha – This chili sauce is available at most grocery stores, but you can also substitute a small diced jalapeno.
- salt and pepper – For simple seasoning.
