Ingredients and Substitutes

  • Prime Sirloin Steak – If possible, choose steaks that are 1.5 inches thick, as they are less likely to be overcooked. Although you can use other cuts of meat (T-Bone, Porterhouse, new york striprib eye steak, Chuck Eye Steak, flank steaketc), their searing times will vary and you will need to use Probe Meat Thermometer to ensure completion.
  • yellow onion – I chose these because they have a classic flavor when caramelized, but you can also use white or sweet onions if you prefer.
  • Worcestershire sauce – Used to enhance the meaty taste of steak. Soy sauce or coconut aminos can be used as substitutes.
  • olive oil – Used to create a golden crust on steaks. Feel free to substitute your favorite neutral cooking oil, such as avocado oil.
  • dry red wine – Try Merlot, Pinot Noir or Cabernet Sauvignon.
  • unsalted butter – I prefer grass-fed butter because it tastes great, but use your favorite unsalted variety.
  • garlic – I recommend using fresh garlic cloves for this steak and potatoes recipe, but minced garlic in a jar will work too.
  • Yukon Gold Mini Potatoes – Cut them into quarters. You can also use traditional Yukon Gold or Russet potatoes, but they will need to be chopped into small pieces. Any other potatoes you like will work too.
  • fresh thyme – Add depth and aroma to steak and hash browns. Other fresh herbs, like oregano or rosemary, also work well.
  • sea ​​salt and black pepper

How to Cook Steak and Potatoes in the Oven

  1. Seasoned steak. Pat the steak dry with paper towels. Sprinkle salt and pepper on both sides of the steak and set aside to come to room temperature. (This helps the steak cook more evenly.)
  2. Caramelized onions. Add olive oil to a large frying pan over medium-high heat. Add onion, red wine and Worcestershire sauce. Cook for 5 minutes. Season onions with remaining salt and cook until caramelized.
  3. Make onion butter. Puree everything except 1/4 cup caramelized onion food processor. Add butter and garlic and stir until combined.
  4. roast steak. Heat more olive oil in a pan cast iron skillet overheat. Add the steak and fry on both sides until browned. (No need to cook for this step.)

  1. Add potatoes. Remove the pan from the heat, remove the steak, and add the potatoes. Top with butter mixture and thyme sprigs.
  2. Grilled Garlic Steak and Potatoes. Cook in the oven until the internal temperature of the steak reaches the desired doneness meat thermometer (See timing recommendations below). Remove steak to rest and continue to bake potatoes until fork tender.

  1. Serve. Serve steak and potatoes with remaining caramelized onions.

How long does it take to cook steak and potatoes in the oven?

for medium rare steakGrill steak on the stove 2-3 minutes per side First (until browned) then steak with potatoes 8-10 minutes at 375°F, or until the steak reaches 130 degrees Fahrenheit. (Time range is for 1.5″ thick steak. For best results, use meat thermometer.)

You can also set the internal temperature to your desired doneness: 120 degrees (rare), 140 degrees (medium), 150 degrees (medium) or 160 degrees (done). (This is the desired internal temperature when the steak is removed from the oven; the temperature will rise another 5 degrees at rest.)

After the steak is cooked, take it out and continue to bake the potatoes for about approx. 10 minutes leftuntil fork soft.

Storage Instructions

  • Shop: Store leftover steak and potatoes in an airtight container in the refrigerator for up to 3 days.
  • Meal preparation: To caramelize the onions ahead of time, prepare the caramelized onion butter and store separately until the rest of the recipe is ready to cook. You can also dice the potatoes ahead of time and submerge them in water in the refrigerator (drain and pat dry before cooking).
  • Reheat: Heat leftovers in the oven over low heat, or briefly on the stovetop. Microwaves are fine for potatoes, but can overcook and dry out the steak.
  • freeze: You can freeze grilled steaks and potatoes for up to 3 months, but the texture of the potatoes may change.

  1. Pat the steak dry with paper towels. Season both sides of the steak with a total of 2 teaspoons (12 g) salt and 1/2 teaspoon (1 g) pepper. Set aside to room temperature.

  2. At the same time, in a large frying pan Heat 2 tablespoons (29.5 ml) olive oil over medium-high heat until shiny.

  3. Add onion, red wine and Worcestershire sauce.Cook 5 minutes.

  4. Season onion with remaining 1/4 teaspoon (1.5 g) salt.Continue to cook, stirring frequently, about 25 minutesuntil the onions are caramelized.

  5. Preheat oven to 375°F (190°C).

  6. Add caramelized onions (except 1/4 cup – reserve 1/4 cup for serving) food processor. Blend until smooth.

  7. Add butter and garlic to food processor. Pulse until combined.

  8. Heat a cast iron skillet over high heat. Add the remaining tablespoon (14.7 ml) of olive oil and toss to combine.

  9. Add the steak in a single layer to the pan.Look for 2 minutes per side, until golden brown. (The steak will not be cooked through at this point.)

  10. Remove the pot from the heat. Working quickly to avoid overcooking the steak, move the steak to one side of the pan and add the potatoes to the other. Put a spoonful of caramelized onion butter on top of each steak, then pour the rest of the caramelized onion butter over the potatoes. Place sprigs of time all over the pan.

  11. Transfer the pan to the oven and bake about approx. 8-10 minutes For medium rare steaks, or adjust the time accordingly to achieve your desired doneness.For best results, insert Probe Thermometer Before placing in the oven, place the steak in the center of one of the steaks and set the temperature to your desired doneness – 120 degrees (rare), 130 degrees (medium-rare), 140 degrees (medium), 150 degrees ( Moderate good) and 160 degrees (good) finish. (This is the desired internal temperature when the steak is removed from the oven; the temperature will rise another 5 degrees at rest.)

  12. Remove the steaks from the pan immediately to prevent them from cooking in the residual heat.rest 10 minutes on a plate or cutting board. Discard the thyme sprigs.

  13. Meanwhile, while the steak rests, return the potatoes to the oven about 10 minutesuntil fork soft.

  14. Serve steak and potatoes with the reserved 1/4 cup (32 g) caramelized onions and add fresh thyme if desired.
