How to Roast a Whole Head of Cauliflower

  4. Place trimmed cauliflower heads upside down (core side up) on a 6 qt (5.6 liter) dutch oven. Drizzle 1/2 of the sauce over the cauliflower, tilting it so it drips onto the core and around the cauliflower. Flip over and drizzle the remaining sauce over the top. Use a pastry brush to brush off anything that dripped into the pan or didn’t spread well.

  5. Cover the dutch oven with a lid and bake 35-45 minutesUntil the cauliflower is tender and can be easily pierced with a fork, knife, or fork.

  6. Remove the lid. Sprinkle the remaining 2 tablespoons grated Parmesan over the top of the cauliflower.Place the cauliflower under the broiler and roast about approx. 5 minutesuntil the cheese is browned.
