ingredients you need
This section explains how to choose the best ingredients for the tomato jelly cranberry sauce, the role of each ingredient in the recipe, and substitution options. For measurements, see Recipe card below.
- cranberry – Fresh cranberries taste best, but frozen cranberries will work too. Cranberries actually contain a small amount of natural sugar, which helps the sauce thicken and gel like you’d expect from traditional cranberry sauce. If you have extra cranberries, use them Unsweetened Dried Cranberries.
- Besti Luo Han Guo Powder Allulose Blend – This works best because it dissolves completely and doesn’t crystallize. If you’re going to use your sugar-free cranberry sauce soon, Powdered erythritol or other powder sugar substitute can work (see mine Sweetener Conversion Chart amount), but if you want to avoid the sauce becoming crunchy after storage, Besti is the only one to use – and it tastes closest to real sugar.
- water – Helps thin the sauce so everything is evenly mixed.
- orange peel – Add as much as you like depending on how much you like orange. If you can’t get fresh oranges, a little orange extract (Tasting) is the next best thing.
- vanilla extract – Use high quality vanilla extract for best flavor.

How to Make Unsweetened Keto Cranberry Sauce
This section describes how to make low-carb cranberry sauce, with step-by-step photos and details about the technique to help you visualize it.For complete instructions, including quantities and temperatures, see Recipe card below.
- simmer. Combine cranberries, water, Besti powder and orange zest in a medium pan. Bring to a boil, then reduce heat to simmer and simmer until cranberries pop and a sauce forms.
- Finish. Remove from heat source. Add vanilla extract and stir. Serve hot, room temperature, or refrigerated. (The unsweetened cranberry sauce will continue to thicken as it cools.)

Tip: You can adjust the consistency by adjusting the cooking time.
Cook the sauce for a shorter time with a texture similar to candied fruit, whole berries (as shown), or cook it longer for a jelly-like sauce more similar to the canned version.
Variations on Low Carb Cranberry Sauce
If you’re looking for a healthier cranberry sauce with different flavors, there are plenty of options. Check out these other delicious variations:
- Keto Maple Cranberry Sauce – use 1/2 cup Keto Maple Syrup rather than sweeteners.
- Add warm spices – Before cooking on the stovetop, add 1/2 teaspoon cinnamon, 1/2 teaspoon allspice, 1/8 teaspoon nutmeg, 1/8 teaspoon ground cloves, and 1/8 teaspoon salt to a healthy cranberry sauce.
- Orange Ginger Cranberry Sauce – Add 1/8 tsp grated ginger and double the orange zest.
- Spicy Cranberry Sauce – Add jalapenos or jalapeños to the adobo before simmering.
- Apple Cranberry Sauce – Substitute 1 cup unsweetened applesauce for the water. (This option is healthy, but no Keto friendly! You can use apple extract instead of the keto version. )
- add red wine – Instead of simmering the sauce in water, use 3/4 cup red wine. Red wine adds an irresistibly rich flavor. You can even add some walnuts for a little crunch.
