- Pork tenderloin – don’t confuse pork left! This tender piece of meat comes from the muscles that run along the spine. Look for a pink with some marbling, about 1 lb.
- olive oil – In this recipe I use olive oil to sear the pork tenderloin, but avocado oil would work too. Oil is also used in marinades.
- garlic -Use crushed garlic cloves instead of chopped, as crushed garlic cloves are less likely to burn from the heat. If you don’t have fresh garlic on hand, you can substitute 1/2 teaspoon of garlic powder.
- fresh rosemary – I used fresh herbs, but dried rosemary can also be substituted. You can also substitute thyme. If using dried herbs of any kind, you’ll need 1 tsp to replace the 1 tablespoon of fresh herbs in this pork tenderloin recipe. Feel free to omit this separate ingredient entirely and just add a little extra Italian seasoning.
- lemon peel – Fresh lemon zest will add the best flavor, but you can just use a few teaspoons of lemon juice instead.

How to Cook Pork Tenderloin in the Oven

- Prepare. Preheat oven. Pat the meat dry with paper towels.

Pork tenderloin recipes should be cooked to an internal temperature of 145 degrees Fahrenheit. For juicy results, remove the pork from the 140-degree F heat, as the internal temperature rises by 5 degrees as it rests. It’s okay to be a little pink on the inside.
Tips for the Best Pork Tenderloin Roast
Pork tenderloin is one of the most versatile and easiest proteins to cook, but here are a few tricks to make it even better!
- Pat dry before seasoning. This promotes better browning and a juicier interior.
- Cook immediately or marinate for later use. I made this pork tenderloin recipe right after I added the seasoning, but you can refrigerate and marinate for up to 24 hours if you prefer.
- Use a cast iron skillet. Since it needs to go from the stovetop to the oven, you can cook pork tenderloin in any oven-safe pot, but I highly recommend cast iron skillet。 Excellent heat distribution creates the perfect sear and ensures even heating of the interior.
- Do not move around while it is hot. Leaving the meat in one place will develop a brown crust. Move it just to flip.
- Use a thermometer. Since pork tenderloin is so lean, it can easily be overcooked and end up dry. A probe thermometer is the best choice as it requires no checks and will beep when the correct internal temperature is reached.However, a Instant Read Meat Thermometer will work too. I recommend removing the pork from the 140°F oven, as the internal temperature will rise another 5° while resting (see below).
- let it rest. When the pork tenderloin is done roasting, remove from the skillet and let the meat rest for 5 minutes. This is a must have to keep the juices inside!
- Double if needed. If you need more servings, you can easily double this pork tenderloin recipe in one pan.

- pork seasoning – Instead of using Italian seasoning when roasting pork tenderloin in the oven, use pork chop seasoning The perfect balance of classic saltiness.
- Cajun Pork Tenderloin – If you want this pork tenderloin to have a little kick, use Cajun seasoning.
- lemon garlic – use Lemon Pepper Seasoning Instead of Italian seasoning.
- Ranch Pork Tenderloin – Use to make Ranch Style Pork Tenderloin ranch seasoning spices.

Heat for another 10-15 minutes, until warmed. Avoid using a grill pan whenever possible, as this can lead to overheating and dry spots.
- freeze: Wrap leftovers from the pork tenderloin recipe in plastic wrap, place in freezer bags, and store in the refrigerator for 4-6 months. Thaw in refrigerator before reheating. You can also freeze tenderloin uncooked without roasting, then thaw and make this recipe when you’re ready.
