Ingredients and Substitutes
This section explains how to choose the best ingredients for the best cauliflower steak recipe, what each ingredient does in the recipe, and substitution options. For measurements, see recipe card below.
- cauliflower – I used two medium heads of cauliflower. If yours are large, you may need to increase the amount of oil and seasoning. After washing the cauliflower, make sure to dry it – this will roast the outside instead of steaming in the oven, then add the spices. For larger heads of cauliflower, you can get up to three “steaks.” Medium heads usually yield 2 of each.
- olive oil – Helps spices stick and enhance flavor. butter (butter flavored) or avocado oil would also work. I don’t recommend using butter, it burns easily.
- seasoning – sea salt, black pepper, chiliand garlic powder. See variations below for other seasoning options.

How to Cut Cauliflower Steaks
- prune. Remove excess green leaves from cauliflower heads.
- cut. Place cauliflower on a cutting board, stem side up.use one sharp knife, sliced thinly, about 3/4 inch thick. (You’ll get 2-3 full slices from each head.)

Tip: don’t throw away your florets!
You’ll get 2-3 whole slices off each head, but the ends may split into florets, so you can use them for another recipe, roast them on the same pan, and make Roasted Cauliflower Respectively.
