Thankfully, after our Covid outbreak we are all starting to feel a little bit back to normal and everyone’s appetites are slowly returning. So this week feels like a more realistic menu for us. We will also resume our Gousto subscription in preparation for next week’s program.
Without further ado, here’s the meal plan for the week.

on Monday
Lamb shank with roasted vegetables, mashed potatoes and mint gravy. I know Monday nights seem like a lot, but I’ve broken up from college for Easter and wanted to have a nice meal with all of us since we usually eat at different times on Mondays.
Tuesday
slow cooker kebab Served with salad and garlic mayonnaise on flat bread.

Wednesday
Baked Potatoes with Cheese and Red Onion Roasted Broccoli. Our meatless meals for the week require minimal effort.
Thursday
Chinese Five Spice Beef Fried Rice. Here’s another super quick dinner that will satisfy even the biggest of appetites.
Friday
Homemade Cheese Meatballs with Tomato Sauce and Pasta.
Saturday
Homemade Lasagna Served with garlic ciabatta bread.
Sunday
It’s Easter, so that means a roast dinner. We got a lovely cut of beef from Asda (and £1 back in my rewards jar!) roasted carrots, parsnips and potatoes, cauliflower cheese, Yorkshire pudding, leeks and a very thick gravy. I’m going to go all out and bake red velvet brownies for pudding. We don’t usually eat pudding, but hey, it’s Easter!
