it’s easy Slow Cooker Chicken Cacciatore Recipe (aka Crock Pot chicken cacciatore) is one of my favorite labor savers chicken dinner and one of my favorites Slow Cooker Recipes。 It’s packed with protein and plenty of veggies that are gently cooked for maximum flavor with minimal work.
The process is as simple as searing the chicken breast and searing the veggies before adding them together in the slow cooker, but you can even skip the searing step if you’re in a hurry.
What is Chicken Cacciatore?
Chicken cacciatore is a classic Italian dish prepared “hunter style” (cacciatore means “hunter” in Italian) and usually features tender chicken in a rustic sauce of tomatoes, bell peppers, onions and garlic.

Ingredients and Substitutes

- garlic – Fresh garlic tastes better in this recipe, but you can also use 1 tsp canned minced garlic or 1/4 tsp garlic powder.
- onion – I picked a yellow onion for this recipe, but use any color you like.
- red bell pepper – The red ones go well with the tomatoes, but use any color you like.
- diced tomatoes – Use the canned variety and drain.
- herbs – Fresh rosemary and fresh thyme are classic choices for this dish, but you can easily substitute fresh basil if you prefer.You can also add a teaspoon of dried oregano (or italian seasoning) for extra flavor, or red pepper flakes for heat.
- chicken breast – You can also use boneless chicken thighs or bone-in chicken thighs if you prefer.
- sea salt and black pepper
- bay leaf – Adds a subtle and distinctive herb flavor to dishes. Just be sure to remove it before serving.
Variation: Add mushrooms!
Add sliced creamy mushrooms to the rest of the vegetables for a savory and earthy taste.
How to Make Slow Cooker Chicken Cacciatore

- Season the chicken. Sprinkle salt and pepper on both sides of chicken breasts.
- roast chicken. Heat oil in a large skillet or skipping pot over medium heat. Fry the chicken for a few minutes on each side until golden brown.
Tip: Don’t move the chicken around while it’s roasting.
This will ensure that the chicken browns nicely.
- Fried vegetables. Add more oil to the pan. Add onion and red pepper. Saute until the onions are translucent and brown. Add garlic and sauté until fragrant.


- combined. put the chicken in a slow cooker. Add the diced tomatoes, rosemary, and thyme to the pot with the vegetables. Toss well, then pour evenly over chicken. Place a bay leaf in the center.
- chef. Cook the ground chicken in the slow cooker (see timing suggestion on recipe card below).
- bold. You can serve right away, but if you prefer a thicker sauce, remove the chicken and cook the sauce for an additional hour in the slow cooker on low.


Tip: If you’re short on time, you can skip the browning step.
You can whisk the sauce ingredients together into a bowl. However, if you roast the chicken and saute the veggies, the flavors will be deeper and stronger – definitely worth the extra 10 minutes!
storage instructions
- shop: Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Reheat: This easy Crock Pot chicken crumble reheats really well. Simply heat in the microwave, stovetop, or slow cooker until hot.
- freeze: This dish freezes really well, too! Place it in a zip-top bag, remove excess air, and freeze for up to 6 months. You can even double the recipe and enjoy half for dinner and the other half as a freezer meal for later.

Serve immediately. If you like a thicker sauce, you can remove the chicken and simmer the sauce for an additional hour in the slow cooker over low heat.
A tastier way:

Season chicken breasts on both sides with salt and pepper.

Heat 1 tablespoon (15 ml) of oil in a hot skillet skipping pot over medium heat. Fry the chicken for a few minutes on each side until golden brown. (It doesn’t have to be cooked on the inside.) Add the chicken to the slow cooker.

Add another tablespoon of oil to the pan. Add onion and red pepper.Fried for 7 to 10 minutesuntil the onion turns translucent and brown.

Add the garlic and sauté for another minute, until fragrant.

Add the diced tomatoes, rosemary, and thyme to the pot. Stir together, then pour evenly over the chicken in the slow cooker.

Place a bay leaf in the center.

Cover and cook 3 to 4 hours 6 to 8 hours on high or low.
