- vegetable – For this Air Fryer Roasted Vegetables recipe, we used bell peppers (I used red bell peppers, but you can choose any color), zucchini, one broccoli, one cauliflower, mushrooms (I used creamy mushrooms) and red onion. See below for other vegetarian options!

Tips for the Best Air Fryer Vegetables
Cooking veggies in the air fryer is pretty easy, but I have a few tips to make sure they’re tender and cook evenly:
- Choose vegetables that cook at a similar rate. Soft and firm vegetables take different cooking times, so choose ones that are similar in firmness. If you mix and match, chop the tougher vegetables smaller than the softer ones.
- Cut vegetables into even sized pieces. Cutting vegetables into equal sized pieces ensures that all pieces cook evenly.
- Do not overcrowd the air fryer basket. Some overlap is ok, but you don’t want multiple layers. Work in batches, if needed, depending on the size of the air fryer basket.
Can You Cook Frozen Vegetables in the Air Fryer?
Yes, you can cook frozen vegetables in the air fryer, although they will be softer than fresh vegetables. Air fry them from frozen (no need to defrost first) and add a few minutes to the cooking time.

Take advantage of the endless combinations available for air frying vegetables! Mixing and matching is easy; just make sure to choose foods that cook at the same speed or cut foods that typically take longer to cook. Keep in mind some key differences in cooking times below:
- Soft vegetables: This air fryer vegetable recipe uses soft vegetables that air fry in just about 8 minutes. You can use other soft vegetables such as asparagus, tomatoes, onions (any kind), peas, green beans, zucchini, or eggplant.
- Hard vegetables: Brussels sprouts, root vegetables (such as carrots, beets, rutabagasand parsnips) and butternut squash (such as butternut squash, acorn squash, and squash) will take longer to air fry than softer vegetables. You need to cook these firm vegetables for 12-15 minutes. If you want to cook them less with softer vegetables, cut them into very small pieces.
- Potato: If you want to serve your air fryer vegetables with potatoes or sweet potatoes, it’s best to cook them with firm vegetables. Alternatively, you can air fry them for 5-10 minutes to partially soften them before adding the soft vegetables to the basket.
