This Air Fryer Baked Potatoes recipe will convince you that air fryers were only made for baked potatoes. They’ll quickly become your new favorite way to cook potatoes as a side dish. They are just that good!

This is a quick and easy recipe that only requires 5 minutes of prep and 20 minutes in the air fryer. It’s made with creamy Yukon Gold potatoes, cut into chunks, coated in oil and perfectly seasoned, then air fried on high heat until perfectly soft and crispy.

  • Potato: I use baby Yukon Gold potatoes cut into quarter or inch cubes. You can also use russet or red potatoes if you prefer.

  • Prepare the potatoes: Wash and dry the potatoes thoroughly, then cut them into 1-inch pieces with a knife.

What happens if you don’t soak your potatoes before air frying?

Depending on the type of potatoes you use, not soaking them will prevent them from doing their full crisping.

For the baby Yukon Gold potatoes I used in this recipe, I don’t think it’s necessary to soak the potatoes before cooking.

If you’re using potatoes with a higher starch content, such as russet potatoes, you may want to soak them in salted water first. This step absorbs excess starch for a crisper texture.

Why are my baked potatoes not crispy?

  • Wash the potatoes and dry them. I like to leave the skins on my potatoes, which means I also like to make sure they are intact before cutting them. After you’ve wiped the potatoes clean, dry them thoroughly. Too much moisture will cause them to be steamed instead of baked.
  • Leave space in the air fryer. Potatoes need space so that the hot air can reach all sides. Air fry in batches if necessary.
  • Flip halfway through cooking. After air frying for 10 minutes, grab the air fryer basket and shake gently to redistribute the potatoes. This ensures they are evenly heated and crispy on all sides.
