this Mediterranean Salad Recipe is a remake of the classic Greek Salad, add chickpeas. Mediterranean Salad:
This salad is full of fresh veggies! Feel free to customize it with what you have on hand:
- cucumber – You can use English cucumbers or Persian cucumbers for Mediterranean salad recipes.
- grape tomato – I used grape tomatoes, but any tomato will do, including cherry, roma, plum, roasted tomatoesand even sun dried tomatoes.
- chickpeas – Also known as chickpeas, they add protein, fiber and a pleasant nutty flavor. You could also try white, kidney, or black beans, but I think the Mediterranean chickpea salad goes best with the other flavors here.If you have extra beans, use them to make Oven Roasted Chickpeas!
- bell pepper – I used yellow and red diced peppers, but you can use any color you like.You can also use Roasted Red Peppers instead!
- Shallot – Red onions have a crunchy texture and a subtle sweetness. You can also use diced yellow onions, Vidalia onions, or shallots for a similar flavor and texture.
- feta cheese – A classic choice for a Mediterranean cucumber salad! You can also use crumbled goat cheese or aged Gouda cheese for a different twist.
- fresh herbs – I used fresh parsley and fresh mint, but you can try other fresh herbs like dill or chives. I do not recommend using dried herbs here.
Variations: Add olives or vegetables!
Black, green, or kalamata olives would pair perfectly with the other flavors here. You can also add lettuce or other greens if you like, just double the dressing if you like.
Vinaigrette:
The dressing for this Mediterranean salad is similar to mine Greek Salad Dressingbut this time I reduced the components to make it simpler:
- olive oil – Avocado oil works too, but olive oil works best with other flavors in the salad.
- lemon juice – Freshly squeezed lemon juice tastes best, but you can use bottled lemon juice For convenience. You can also use red wine vinegar instead.
- dried oregano – Adds vanilla flavor to dressings.You can also add dried thyme, basil, sage, marjoram, and even italian seasoning.
- garlic powder – Adds a subtle and earthy flavor.
- sea salt & Black pepper
Variation: Add Dijon mustard!
If you like the flavor, a teaspoon of Dijon mustard works well with this dressing.

How to Make a Mediterranean Salad

- Toss the vegetables. In a large bowl, combine cucumbers, tomatoes, chickpeas, green peppers, and red onions.
- Add herbs. Add fresh parsley and fresh mint, if using.
- Make the dressing. In a small bowl, whisk together vinaigrette ingredients: olive oil, lemon juice, garlic powder, oregano, salt, and pepper.


- combined. Drizzle the dressing over the Mediterranean salad. Stir to combine, then sprinkle feta cheese on top and mix gently. You can adjust salt and pepper to taste if desired.


storage instructions
- shop: Store leftovers in an airtight container in the refrigerator for 1-2 days.
- Meal Prep: Chop the vegetables, stir in the dressing, and store in a separate airtight container for 2-3 days. Mix up Mediterranean Chopped Salad just before serving.
