- zucchini – I sliced it into 1/2 inch thick slices, but you can also slice zucchini strips if you prefer.If sliced, not too thin unless you want crisp Air Fryer Zucchini Chips Instead of baby zucchini!You can also use this Air Fryer Zucchini Recipe yellow zucchini instead.
- olive oil – Adds flavor and helps seasonings stick. Avocado oil or any neutral cooking oil will work too.
- Herbs and Spices – garlic powderdried oregano (optional, omit or use if you want italian seasoning instead), sea salt and black pepper.
- grated Parmesan cheese – for a cheesy crispy crust! If it suits your lifestyle, you can substitute breadcrumbs for half, or another grated hard cheese, such as Pecorino Romano. Semi-soft or semi-hard cheeses, such as mozzarella or cheddar, also taste great on air-fried zucchini, but they’ll turn out more melty than crispy.
Variation: Add lemon juice!
If you like the taste, you can add a few teaspoons of lemon juice along with the olive oil.

How to Cook Zucchini in the Air Fryer

- Season the zucchini. warm up your Air fryer. Place zucchini slices in a large bowl. Drizzle with olive oil, then toss to coat. Add garlic powder, oregano, salt and pepper. Stir well.
- Add cheese. Sprinkle grated Parmesan cheese on top. Throw away the coat again.


- Air fry. Place zucchini slices in a single layer in air fryer basket. If the parmesan coating looks sparse, sprinkle another thin layer of parmesan on top. Cook until softened and golden brown.


How long does it take to cook zucchini in the air fryer?
Air fry the zucchini for about 8 minutes, or until tender. Cooking time may vary depending on the thickness of the slices.
Tips for the Best Air Fryer Zucchini
- Cut into even slices. You want all of them to be the same thickness so they cook at the same rate.
- If the zucchini is wet, wipe it dry. If you sliced your zucchini ahead of time, or if your zucchini is very watery, pat dry with a paper towel before adding the oil.
- Don’t overcrowd the air fryer. My air fryer fits one batch, but smaller air fryers may need multiple batches.
- Avoid flipping the zucchini. The parmesan coating can easily come off if you flip it during cooking, so it’s best to always leave pieces in one place.

- shop: Store leftovers in the refrigerator for up to 3-4 days.
- Reheat: You can reheat the zucchini again in the air fryer (this time at 350 degrees Fahrenheit) or in the oven. I don’t like to microwave zucchini because it gets soggy, but it’s fine if you’re in a hurry.
- freeze: You can freeze this dish, but it will be mushy when thawed. If you still want, you can freeze in a single layer on a parchment-lined baking sheet, then transfer to an airtight container or freezer bag. Stores in the refrigerator for up to 3 months.
