what do you need

All the ingredients in the sauce are pantry staples. Check the recipe card at the bottom of the post for exact quantities.

for chicken

  • Chicken Thighs – Chicken thighs with the skin on will keep them extra juicy, but skinless ones will work too.
  • Avocado oil – Coconut oil is another healthy alternative. You can also use olive, corn, canola or vegetable oil.
  • salt and pepper – Use kosher salt and fresh black pepper.

For the sauce

  • Honey – Use only raw honey. Maple syrup and agave syrup are too smoky.
  • soy sauce – This Japanese sauce is the liquid that forms when miso paste ferments. This is a very traditional soy sauce.
  • Sriracha – Any Asian chili garlic sauce will work. You can also use Korean Gochujang chili sauce.
  • Ginger powder – Fresh ginger is definitely an option.
  • smoked paprikaFeel free to use mild chili powder.
  • garlic – Freshly minced garlic adds the most aroma and flavor, but if you’re in a pinch, garlic powder will save you.
  • chicken soup– Vegetable soup also works. If neither is available, use water.
