Almond Joy Protein Bites
yield: Serves 5 (3 bites each)
You will need: Measuring cups and spoons, mixing bowl, mixing spoons, rubber spatula

raw material:
- 1/2 cup almond butter (or nut/seed butter of choice)
- Serves 4 (136 g) I chocolate protein Or choose protein powder
- 1/8 cup chopped almonds (or nut of choice)
- 2 T flaked or shredded unsweetened coconut
- 2 teaspoons cocoa powder
- 1 teaspoon almond extract
- 4-6 T unsweetened almond milk* (or milk of choice, or water)
- 2 T honey (optional)
- Ingredients: 2 teaspoons coconut flour or coconut flakes
route:
- Place the nut butter, protein powder, almonds, coconut, cocoa powder, and almond extract in a mixing bowl and mix until combined.
- Add almond milk or other liquid and mix. Continue adding liquid* until the batter is thick enough to form into balls.
- Roll into about 15 evenly sized balls. Roll in the coconut topping and store in the refrigerator in an airtight container.
*NOTE: Different factors will affect the moisture of this recipe, including altitude, climate, and type of nut butter (and its consistency/liquidity). Feel free to increase the amount of liquid as needed. We had testers from Australia, California, and Colorado testing this recipe, and they all used varying amounts of liquid.
