Healthy Apple Muffins with Oats and Raisins
One of my favorite parts of fall is picking fresh apples! Not only are they extra sweet and perfect for eating on their own, but they're also incredible in recipes like mine Easy Slow Cooker Baked Apples and Apple Cinnamon Baked Oatmeal.
However, my absolute favorite way to use them is in this easy apple muffin recipe! These kid-friendly muffins are easy to make and a fun baking project to do with the kids. Plus, because they're nut-free, they're safe to send to school.
I like to keep a batch on hand for a quick breakfast or afternoon snack and always make extra to freeze for later. Soft and moist, studded with raisins and apple slices, it's truly a delicious seasonal recipe that everyone will love!

- Maple syrup: This provides the perfect amount of sweetness without the need for refined sugar.
- Oat flour and coconut flour: This combination makes the muffins gluten-free while giving them a soft texture. We do not recommend substituting any other flour for this recipe!

Best Apples for Waffles
Harder apples are best for baking, as softer apples tend to turn to mush! Since we only need a few apples to make these gluten-free apple muffins, I recommend using sweet varieties like Honeycrisp, Fuji, or Pink Lady apples for the best flavor.
How to Make Apple Muffins Recipe
- Prepare: Preheat oven to 350 degrees F and line a 12-cup muffin tin with silicone liners or parchment paper muffin liners.
- Stir in wet ingredients: In a large bowl, add eggs, applesauce, melted cream, and maple syrup. Blend until smooth.
- Add dry ingredients: Add the oat flour, coconut flour, baking powder, cinnamon and salt to the bowl with the wet ingredients. Stir gently with a spatula until smooth. Then, stir in the raisins and apples.
- part: Fill each muffin cup 3/4 full.
- bake: Transfer the muffin pan to the middle rack of the oven and bake until the muffins are puffed and spring back when lightly touched.

Baking Tips
- Use store-bought oat flour. This allows for the most accurate measurements. Of course, you can use Homemade Oat Flour If you will. Try to make it as good as possible!
- use Electronic kitchen scale Measure your flour. It can be tricky to measure because it's easy to compact or even straight out of the bag. The same goes for coconut flour. Small differences can drastically affect the recipe since it is a very absorbent flour. Therefore, we include grams for the most accurate measurement. If you don't have a scale, lightly pack the oatmeal into a measuring cup. Then, use spoon and level method Measure your coconut by four.
- Avoid overmixing. Carefully stir the ingredients until a smooth batter forms and there are no lumps. Continuing to mix will result in dense, dry muffins.
To peel an apple or not to peel an apple
The apples are grated before being folded into the muffin batter. Grating the apples both adds moisture to the batter and ensures the apples cook quickly.
You can leave the skin on the apple or peel it off. We like to keep the texture and nutritional value provided by the (organic) peel, but feel free to remove it if you wish.
