- 2 pounds lean turkey
- 4 scallions, white and green parts, thinly sliced
- 2 teaspoons fresh ginger, grated
- 1 small jalapeño, seeded and chopped (wear plastic gloves when handling)
- 1.5 teaspoons Celtic or Himalayan pink salt
- ⅛ – ¼ teaspoon ground black pepper
- pinch of cayenne
- toasted sesame oil (optional)

Spray or brush the skillet with coconut oil. In a large bowl, combine turkey, scallions, ginger, jalapeños, salt, pepper, and cayenne.
Heat skillet over medium-high heat. Cook burgers 5-6 minutes per side (depending on how thick you are), or until an instant-read thermometer inserted in center registers 165°F and meat is no longer pink. Brush burgers (if using) with a few drops of toasted sesame oil.

The burgers will soften before they are fully cooked, so just turn once and be careful.
These also bake well. Clean the grill and brush the burgers with coconut oil before grilling.
These can be made ahead and refrigerated.
