This egg salad is made with avocado puree, adding healthy fats and nutrients! It's also served BLT style with fresh tomatoes and bacon bits. It's easy to make, super fresh, and perfect piled into lettuce wraps, on toast, or served with fresh vegetables or crackers (or eat it by the spoonful straight from the mixing bowl. Yes, guilty of that.)

This recipe will be your new go-to when you need a quick and easy lunch option!

Is it okay to eat eggs and avocado together?

Of course they are! Eggs and avocado are the perfect pairing for egg salad. The flavors complement each other perfectly, with the mashed avocado forming a deliciously creamy mixture with the eggs (hello, no mayonnaise!).

Tips and Notes

  • Mash the avocado to your liking. You can make it completely creamy or leave a few chunks out for texture.
  • Cut everything into smaller pieces. I recommend cutting the tomatoes in half and then dicing the bacon, green onions, and any other additions you decide to use into fairly small pieces. This ensures you can taste every flavor in every bite!
  • customized! Like any egg salad, this Avocado Egg Salad can be customized with any of your favorite add-ins. Try it with diced celery or red onions, nuts or seeds, capers, diced cucumbers, you name it.
  • prepare in advance. Want to get ahead with this recipe? hard boil eggs Store them in the refrigerator for a day or two before making the salad.

Variety

  • Make it creamier. While avocado already creates a super creamy texture, you can make it even creamier by mixing in a few tablespoons of mayonnaise or Greek yogurt.
  • Kick the heat. Boost the spice with extra red pepper flakes, a dash of chili powder, some diced jalapeños, or a dash of your favorite hot sauce.
  • Make it vegetarian. Skip the bacon or use plant-based bacon.
  • Make it brighter. Try adding a little lemon or lime juice for another layer of flavor.

How long does egg salad last in the refrigerator?

This avocado and egg salad will stay fresh in the refrigerator for up to 2 days. I don't recommend storing it for too long as the avocado will start to oxidize and turn brown.

To preserve a bit of your egg salad, try adding a squeeze of lemon juice. This will help curb the effects of oxidation! You can also cover the storage container with a piece of plastic wrap and press it into the surface of the egg salad, then close the lid.
