Madhya Pradesh draws inspiration from ancient traditions and outdated cultures, and prides itself on preserving and sharing its original traditional flavors. Although these condiments are intertwined with long-lost grand cooking stories, they have now become the top priority of a few high-end kitchens. In general, to inspire the unusual flavor of Madhya Pradesh requires a variety of samples. Therefore, I have seen five of the best chefs in Madhya Pradesh, who have made great contributions to turning the state into gourmet cuisine.

Chef Vivek Kalia is one of the most admired faces among the top chefs at the Taj Mahal and Marriott Hotel in India. With his continued work at the Marriott Indore Hotel, he has now become a well-known culinary expert in Madhya Pradesh. In the past few years, chef Kalia has traveled many streets looking for MP’s long-lost recipes and was inspired to launch a collaborative street dining experience for everyone at the Indore Marriott Hotel. He blends local flavors with the most beloved food in the world, and thoroughly attracts the audience through exquisite food adventures. Shahi Rasmalai and Parda Biryani are some dishes you should not miss!

Bhopal is a storybook about royal stories, some of which are the culinary avenues and royal recipes secretly locked in the kitchen of the former palace. This assumption makes it even more exciting to participate in the gourmet feast designed by Suman Rakhshit, the executive chef who has worked at Noor-Us-Sabah Palace for more than a decade. Chef Rakshit has been cooking novel recipes that best describe the magnificence of the MP capital. His expertise ranges from the historical changes of authentic Mughlai and Peshawari cuisine to pan-Asian cuisine. In Bhopal, taste his flagship dishes Nalli Nihari, Kacche Gosht Ke Kebab, Mughlai Biryani and the original Shahi Toast.

Another outstanding chef who makes Madhya Pradesh cuisine more authentic is Amandeep Singh, who was once the sous chef of Raintree Hotels in Chennai. Now recreating his culinary expertise in Indore, Singh is the head chef in the Indore kitchen, and people have seen him working around the culinary flavors in the Madhya Pradesh food basket. His focus is to revive the traditional and modern culinary influence of Madhya Pradesh over the centuries. Chef Singh is also a food festival expert, and he is eager to entertain Indore as much as possible. I still remember the authentic tastes of MP Dal, Baati, Churma, Kadhi and Aam Pana in a food festival he planned.

Mukul Jia

Although remaking the royal recipe is not a new concept for Madhya Pradesh, only a few chefs can do it! Mukul Jha has 14 years of culinary experience, including collaborating with Michelin chef Darren Rowe in Birmingham, and now brandishing a culinary vision at Radisson’s Indiya Oye. Through a wonderful combination of traditional and cutting-edge cooking techniques, Chef Jha designed a new royal menu for Indiya Oye: let you marvel at the richness of royal favorites. Some of my personal favorite chefs Jha are Murgh Sweta, Bhuna Gosht ka Sev, Triveni Khumb ki Gujiya and Hare Mutter ka Dulma.

Soon you will see Chef Anuj Singh making authentic Indian food designs at the Marriott Indian Restaurant in Indore. This former Taj Mahal chef is an expert at Garni, an Indian bouquet whose voice makes our nostrils itchy. The pungent aroma exuded from the light Indian spices is enough to appetite. Chef Singh’s impressive cooking style caught our attention, after which we tasted Royal Hyderabad Chicken Lagan, coated with thick cashew sauce and coated with local spices. In the Indian restaurant, Chef Singh will make authentic Lucknawi and Awadhi delicacies with a hint of MP.
