fried rice ingredients
This section explains how to choose the best ingredients for egg fried rice, what each ingredient does in the recipe, and substitution options. For measurements, see recipe card below.
- olive oil – For frying.I use light olive oil Neutral flavour. You can substitute any neutral cooking oil, such as avocado oil or refined sesame oil. Some fried rice recipes fry directly in sesame oil, but since I often have regular olive or avocado oil on hand, I use that and add the toasted sesame oil at the end. (I don’t recommend frying in toasted sesame oil, as it can’t handle high heat.)
- frozen vegetables – I used frozen peas and carrots for convenience. You can also use fresh vegetables if you prefer.
- garlic – While optional, I highly recommend adding fresh garlic. It enhances the deliciousness of the dish. You can also use 1 teaspoon instead of 2 cloves of fresh garlic canned minced garlicor 1/4 teaspoon garlic powder.
- Egg – adds flavor, texture and protein to this Chinese fried rice recipe.
- cooked rice – Fried rice recipes typically use Chinese-style medium-grain white rice, but basmati rice, long-grain rice (lower in starch) and even brown rice are also good choices. You can use next-day rice (recommended) or freshly cooked rice.
- butter – Just a few tablespoons can add so much flavor and richness. I use unsalted butter to control the amount of salt.
- sesame oil – Optional, but recommended for classic flavors. As mentioned above, we add it at the end because it can’t handle high heat.
- amino acids or i am sauce – Soy sauce is the classic choice, but I usually choose coconut aminos Instead, it’s similar but a little sweeter. If you use soy sauce, I recommend low sodium soy sauce so the dish is not too salty.
- sea salt and black pepper – I used 1 tsp salt and 1/2 tsp black pepper, but adjust to your taste.
- green onions – Also known as scallions, these are optional and used to garnish this homemade fried rice recipe.

Tips for the Best Fried Rice Recipe
Remember these tips for better, tastier rice:
- Avoid clumping. If using day-old rice, break up the clumps with your fingers (or a fork) before cooking to ensure the seasoning coats the grains evenly.
- use room temperature eggs. Submerge eggs in a bowl of warm water and allow to come to room temperature. Room temperature eggs cook more evenly.
- Use butter and toasted sesame oil. These are my tips for making the best fried rice! Both add a lot of flavor.
- Add your leftovers. This dish is perfect for using up random amounts of leftover protein or whatever veggies you have on hand—and creates new flavor combinations every time! (See below for variant ideas.)
