How to use this gluten-free enchilada sauce
To make gluten-free enchiladas, simply start with corn tortillas (preferably heated so they are pliable) and your choice of fillings (see these Gluten Free Chicken Recipes some thoughts).
Spread a thin layer of sauce on the bottom of the baking sheet, add a few tablespoons of filling to each tortilla, and roll up, arranging seam side down. Spread remaining dairy-free enchilada sauce over tortillas.

Blender Gluten-Free Enchiladas


portion size 4 cup sauce

- 1/3 cup Raw unsalted cashews

- 1 teaspoon paprika
- 3/4 teaspoon sea salt

Bring a kettle of water to a boil. Place cashews in a high-speed blender and add 2⁄3 cup boiling water. Let sit for 5 to 10 minutes.

Pour the tomato paste into a blender with the cashews and add the scallions, jalapeños, cumin, chili powder and salt. Beat puree until smooth, creamy, and orange. Taste for seasoning and add more salt as needed.
