How to Grow Velvet Beans

Growing these power-packed pods is easier than easy.
Plant velvet beans in the spring after all danger of frost has passed, and give them something to climb on—just be aware that they will completely cover small trees and shrubs. Even medium-sized trees can be overwhelmed by their strong, twisting vines.
In other words, don’t plant them next to your award-winning camellias.
They can tolerate some shade but do best in full sun. Poor soil isn’t much of a problem – they can handle it thanks to their nitrogen-fixing ability.

They grow very well in hot weather and lots of rainfall. Irrigation will make them grow faster if it doesn’t rain; however, I plant mine half-wild in the yard and never water. . . I still have a lot of beans.
I even guerrilla planted them in a clearing near me to get them to grow well. If the soil is good enough, I think they will naturalize (they pretty much already do this in my food forest – I always plant a few every year even when new ones aren’t being planted).
notes: There are more wild velvet beans, covered with stinging hairs, hence the name “mad beans”. Most of the ones I grow have this property, although dealing with fluffy velvet pods can make you a little itchy, especially if you have sensitive skin.
Cooking Perfect Pods
Cooking velvet beans takes about 15 minutes to boil.
When the beans fill up and turn green, I pick them, put them in a pot, cover with water, add plenty of sea saltthen cook until softened and beginning to crack, revealing the delicious beans inside.
The pods themselves are tough and inedible, but the seeds inside taste like cooked green peanuts.
Once I cook my green velvet beans, I shell them, dry the green beans, and freeze them so I can ration the beans throughout the year. Pods are only produced in late summer and fall, so you need to plan ahead.
How to Use Velvet Beans
You know your pods are ready to serve when the beans are nicely filled, but the pods haven’t dried out. If you want velvet bean seeds, you’ll need to let them dry on the vine until the pods are nice and firm.
You can roast the seeds and use them as a coffee substitute, but unfortunately they lack caffeine.
Dried beans can also be used as a health supplement, but I’m sticking with delicious green beans.
