This Caribbean Shredded Chicken is one of our all-time favorite slow cooker chicken recipes!

Here are your favorite chicken cuts, slow cooked with a delicious combination of sweet, savory, and savory spices for a mouthwatering, hearty yet light meal.

Our favorite way to eat this chicken is wrapped in lettuce, but it can also be served over rice, in tacos, or straight out of the saucepan with a fork…or your fingers .

Yes, it is that delicious. I like to make this chicken early in the week so it can be served for lunch or dinner throughout the week.

Chicken Lettuce Wraps with Mango Salad.

Ingredients Needed for Caribbean Shredded Chicken:

  • chicken: Make sure you are using boneless, skinless chicken.
  • vegetable: We’re using a mix of fresh bell peppers, onions, and jalapenos, along with a bit of canned diced tomatoes.
  • chicken soup: Adds a lot of flavor and moisture to the chicken.
  • Aromatics: We brighten it up with freshly chopped garlic and cilantro.
  • Lime Juice: Lime juice adds a bright citrus flavor and helps tenderize the meat while cooking.
  • Spice Rub: Our spice blend is a sweet and spicy blend of minced ginger, cumin, sea salt, black pepper, all spices, paprika and coconut sugar.
  • Mango Sauce: Feel free to use store-bought mango salsa or make an easy homemade batch using mango, diced red onion, chopped cilantro, and lime juice.
  • Serve: Biber lettuce (or your other type of lettuce), avocado, tomato, or any other addition of your choice.

How to Make Shredded Chicken

This delicious shredded chicken recipe takes just 10 minutes of hands-on time! And homemade salsa!

  1. Combine and cook: In your slow cooker, combine the chicken, tomatoes, broth, vegetables, garlic, lime juice, cilantro, and seasoning. Stir well, then cook on high for 3 hours.
  2. To make the salsa: In a bowl, combine all salsa ingredients and place in the refrigerator.
  3. Chop and serve: Once the chicken is done, shred it directly in the saucepan and serve as desired.

What’s the easiest way to cut chicken?

I find it easiest to leave the chicken in the pan and use two forks to gently pull it apart!

Alternatively, you can use a hand blender to shred the chicken.

Tips and Dos and Don’ts for Caribbean Shredded Chicken

  • Mix everything. Once you have everything in the slow cooker, be sure to mix everything thoroughly before cooking to evenly distribute all the flavors.
  • Let the chicken rest after cooking. I recommend letting the chicken sit for 10 minutes before shredding. This allows time for the flavor and moisture to redistribute back into the meat.
  • Drain, if desired, before serving. If you notice a lot of excess moisture, I recommend scooping the shredded chicken out of the pan with a slotted spoon, which will drain some of the moisture. If it’s too much, you’ll end up with a mess.
  • Need more time? Just cook on low. Just plan for 6 hours instead of 3.

Leftover shredded chicken will keep in an airtight container in the refrigerator for 3-4 days, or in the freezer for 2-3 months.

When you’re ready to serve, defrost the chicken in the refrigerator overnight if frozen, then reheat in the microwave or on the stove over medium-low heat, adding a little broth to moisten if desired.

Caribbean Shredded Chicken:

  • 1 1/2 pound boneless skinless chicken
  • 1/2 cup canned tomatoes
  • 1 cup chicken soup
  • 1 Bell Pepper diced
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 chili minced
  • 1 lime juice
  • 1/2 cup coriander Chopped
  • 1/2 teaspoon ginger powder
  • 1 tablespoon Cumin
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon all spices
  • 1 tablespoon chili
  • 1/2 teaspoon coconut candy

Mango Sauce:

  • 3 mango diced
  • 1/3 cup diced red onion
  • 1/3 cup chopped fresh cilantro
  • 1/2 lime juice

Everything else:

  • Buttered lettuce heads or lettuce leaves of choice
  • 1 avocado slice
  • any other add-ons you want
  • Put all pulled chicken ingredients into your insert slow cooker.Mix to combine flavors, then leave on high for 3 hours.
  • While cooking, prepare the mango salsa: Combine all ingredients in a bowl and set aside in the refrigerator.

  • When the chicken is done, shred it with two forks and stir into the sauce. Let sit for 10 minutes, covered.

  • Assemble the lettuce wraps, top with the mango salsa and other desired toppings like avocado and tomato, and serve.

The chicken gravy is delicious, but the lettuce wraps can be a bit messy if you don’t strain a little while assembling.
