- cauliflower – Choose a medium to large head of cauliflower with tight florets and remove the leaves and stems before rice milling. (Learn more about making cauliflower rice here.) Packaged frozen cauliflower rice can also be used after thawing and squeezing out the liquid.
- hemp seeds – These basically act as “flour” and help to firm and crisp the breadsticks.But if you prefer simple cauliflower breadsticks without the hemp seeds, you can use mine Cauliflower Pizza Crust Recipe as basic.
- Egg – Use whole large eggs. Egg replacer doesn’t hold the cauliflower mixture together very well.
- garlic – Fresh minced garlic is best for cheesy cauliflower bread, but you can also use canned minced garlic. If you don’t have garlic on hand, you can use 1/4 teaspoon garlic powder instead.
- sea salt and black pepper – For simple seasoning.
- butter – For brushing after the bottom is cooked. I use grass fed butter, but choose your favorite unsalted butter. You can also omit it entirely if you wish.
- mozzarella cheese – Topping. Feel free to substitute any other type of shredded cheese you like, such as cheddar or parmesan.
- coriander – For decoration. You can also use other fresh herbs such as oregano or basil.

How to Make Cauliflower Breadsticks

- Cook the cauliflower. Steam the riced cauliflower in a bowl in the microwave (or on the stovetop). Set aside to cool.
- Combine with other ingredients. Process hemp seeds in a food processor until smooth. Add eggs, garlic, sea salt and black pepper. Continue to whisk until smooth. (You can mix the dough in a large bowl if desired, but using a food processor will give the dough a better texture.)


- Remove moisture. When the cauliflower is cool enough to handle, transfer to a clean kitchen towel and squeeze out as much liquid as you can (about 1 cup of liquid).
FYI: This is the most important step!
Draining all the water out ensures that the cauliflower breadsticks don’t get too watery or fall apart.
- process. Add the cauliflower rice to a food processor and pulse until combined, scraping down the sides of the bowl as needed.
- spread. Transfer cauliflower breadstick dough to a parchment-lined baking sheet and spread to 1/3-inch thick.
Tip: Focus on thickness, not pan size.
Depending on the size of the cauliflower, you may end up with more or less dough. Aim for the correct loaf thickness, not spread to the edge of the pan.


- bake. When the top is firm and golden brown, remove and brush with melted butter. Sprinkle shredded mozzarella cheese on top. Bake until the cheese is melted.
- cool. Let the cauliflower cheese bread turn from hot to warm, then cut into strips.


storage instructions
- shop: Cover with plastic wrap and refrigerate cauliflower breadsticks for up to 4 days.
- Reheat: Heat them in a 350°F oven. Microwave works too, but they will be softer.You can also use the Air fryer.
- freeze: Stack cauliflower breadsticks between layers of parchment paper, then place in a zip-top bag and freeze for up to 3 months. Thaw in refrigerator before reheating.

Place the rice cauliflower in a microwave safe bowl.microwave oven on high 10 minutes (or steam on the stove) until tender. Set aside to cool.

While the cauliflower is cooling, pulse the hemp seeds food processoruntil smooth.

Add eggs, garlic, sea salt and black pepper. Process again until smooth.

When the cauliflower is cool enough to handle, transfer it to a tea towel and squeeze tightly a few times to expel as much water as possible. You should come out with close to a glass of water.

Add the drained cauliflower to a food processor. Process until smooth.

Transfer “dough” to a lined baking sheet. Roll out into a rectangle, about 1/3 inch thick. (Mine turned out to be 12×8 inches (31×20 cm), but the size will vary depending on the size of your cauliflower head—thickness is the important part.)

bake 13-18 minutesuntil the top is hard and starting to turn golden.

Brush the top with melted butter.Sprinkle shredded mozzarella cheese on top and bake 5-10 minutes, until the cheese melts. You can place it under the broiler to brown the cheese if desired.

Let cool slightly, then cut in half lengthwise, then crosswise into 1-inch-wide strips, for a total of 24 breadstick-shaped rectangles.
