This oatmeal bake recipe is literally like a breakfast dessert, but it's nutritious, dairy-free and refined sugar-free, and packed with fiber. It's quick and easy to make, so delicious, and can easily be prepped ahead!

What is baked oatmeal?

Baked oatmeal is really just oatmeal casserole! It combines oats, milk, spices and eggs to create a delicious sit-down or grab-and-go breakfast option.

  • gluten free oatmeal – Oatmeal is key! Other types of oats, such as instant oats or steel-cut oats, don't produce the same texture.
  • chocolate chips – These are optional, but of course, delicious! Use your favorite variety.
  • cocoa powder – Cocoa powder gives chocolate baked oatmeal the look and taste of chocolate!
  • chia seeds – Chia seeds are a great way to add extra nutritional value to baked oatmeal recipes. If you don’t have chia seeds, you could try flax seeds or even pumpkin seeds!
  • baking powder – This helps create a lighter, fluffier texture. Without baking powder, baked oats will become dense as they bake.

How to Make Chocolate Mint Oatmeal Bake
