Egg and avocado Basically at the top of my favorite foods list, so whenever I hear about a new way to prepare any of these, I go on top. And the famous internet fluffy Cloud Egg Recipe (sometimes called “egg cloud” or”eggs in the cloud“) is definitely not new, I love creating a good tutorial! So, if you haven’t done any of these before, this guide will tell you everything You need to know: how to make cloud eggs, the ingredients needed (hint: the basics are only 3 easy!), the 5 variants of the add-in, and a foolproof formula to customize them.

What is cloud egg?

Cloud eggs, also known as cloud eggs, are whipped egg whites that are baked first, then topped with egg yolks, and baked until cooked through. Some people like to take the air conditioner off and leave it alone, while others like to cook it longer so it can set and cook through. It ends up looking like a cloud with a sun in the middle!

While cloud eggs became an internet fad back in 2017, they’ve actually been around for centuries in France. [*]

  • 1/2 cup grated cheese
  • 2 tablespoons fresh herbs
  • 2-4 tablespoons cooked minced meat

Tip: If you’re adding cheese or bacon, such as bacon, omit the salt in the base recipe.

How to Make Cloud Eggs

This section shows how to make cloud eggs, with step-by-step photos and details about the technique. See the recipe card below for full instructions.

  1. Separate eggs. Separate egg whites and yolks. Place egg whites in a large bowl and yolks in 4 small bowls.
  2. Whisk the egg whites. use electric mixer Beat egg whites on high speed until stiff peaks form.

  1. Fold the inserts and bake. Gently fold the salt, pepper, and any additions (if using) into the egg white mixture. (Insert idea below!) Spoon the egg whites into 4 mounds and place on a large baking sheet. Use the back of a spoon to make a well in the center, about the size of an egg yolk. Baked egg whites.
  2. Add egg yolks. Gently slide one yolk into each well so the yolks sit on top of a nest of whipped egg whites. (This is why it helps to have the yolks in a separate pinch bowl when starting to separate the eggs!)

  1. Baked egg cloud. Bake again until the yolks are to your liking.

The nutritional information on the recipe card below is for basic eggs in the cloud, just eggs, salt and pepper.

But once you know how to make cloud eggs the basic way, you can have some fun and try one of the variations below. (The number of add-ons is based on 4 eggs, using the formula above!)

4 variants of the add-in

Just add these inserts after whipping the egg whites, along with salt and pepper.

Ham and Swiss Cloud Eggs

  • fold: 1/4 cup deli ham + 1/2 cup shredded Swiss cheese
  • Alternative version: If Swiss food isn’t your thing, cheddar and ham work well too.
  • Nutritional information for each cloud egg: 158 calories | 11g fat | 1.1g total carbs | 0.1g fiber | 1g net carbs | 13.1g protein

Garlic Parmesan Cloud Eggs

  • fold: 1/2 teaspoon garlic powder + 1/2 cup grated Parmesan cheese
  • Alternative version: You can replace the garlic powder with 3-4 minced garlic cloves. (Sauté the garlic first for best results.) Or try adding a little Italian seasoning.
  • Nutritional information for each cloud egg: 126 calories | 8.3g fat | 1.2g total carbs | 0.1g fiber | 1.1g net carbs | 11.2g protein

Cheddar Bacon Cloud Eggs

  • fold: 3-4 tablespoons full cooked bacon + 1/2 cup shredded cheddar cheese
  • Alternative version: Bacon goes with almost any cheese, so feel free to try another cheese Cheese List!
  • Nutritional information for each cloud egg: 161 calories | 11.9g fat | 0.7g total carbs | 0.1g fiber | 0.6g net carbs | 12.2g protein

  • fold: 2 tablespoons chopped chives + 1/2 cup grated Gruyere cheese
  • Alternative version: These cloud eggs have a French twist and are delicious with some ham or even a biscotti.

Tips for Fluffy Cloud Eggs

Many of the best tips for making eggs in the cloud are the same ones I suggest cloud bread

Beat egg whites fully.

To prevent collapsing, it is important that the egg whites reach firm peaks. Some tips to do it every time:

  • A clean bowl is important. If you have any residual oil or fat in your bowl, the whites won’t be able to whip properly. Plastic sticks to oil more easily, so glass, stainless steel, or stoneware bowls are best.
  • Separate the eggs cleanly. For the same reasons as above, make sure that the egg whites don’t have a bit of yolk in them before turning on the mixer. Even if there is only a drop of yolk in it, the whites won’t whip.
  • Room temperature eggs are more prone to hard peaks And faster than cold. Try bringing the eggs to room temperature before starting.
  • Cream of tartar can help. If you can’t wait to make cloud eggs and your eggs are cold and just refuse to form hard peaks, try adding a pinch of cream of cream to the egg whites to help stabilize the egg whites.
  • You can tell the hard peaks are ready Turning the bowls almost upside down doesn’t remove them and the peaks “stand up” from the whisk on the mixer.

Gently fold in the addition.

Once your whites have formed stiff peaks, they will still break down if you stir them or move them too much. When you add salt, pepper, meat, cheese, or herbs to egg whites, be sure to use a gentle folding motion to keep them from deflating.

Do not over bake.

Cloud eggs usually have a runny yolk and only take 3 minutes. You can vary the cooking time to make the yolks to your liking, but watch them carefully because they only take a few minutes!

Storage Instructions

Eggs in the cloud are best eaten fresh – and they’re easy to make from scratch, as they only take 15 minutes to make.

That being said, if you have leftover cloud eggs, store them in the refrigerator for 1-2 days.

Can you freeze cloud eggs?

No, hard-boiled eggs should not be frozen. Safety wise they are fine but the texture will be tough and bouncy – no thanks!

How to reheat egg clouds:

Reheat egg clouds in a 350°F oven for best results. The egg yolks might do more, but they’re still delicious!

  1. Preheat oven to 450°F (232°C).line one bakeware and parchment.

  2. Separate the whites from the yolks and place the whites in one large bowl and the yolks in 4 smaller bowls. (If you’re very careful to keep the yolks intact, you can keep them in a bowl.)

  3. In a large bowl, use hand mixer Whip the whites until stiff peaks form.

  4. Add salt, pepper, and any add-ons (if using). Be careful not to spoil the whites. Scoop the egg whites into the 4 hummocks on the baking sheet. Use a spoon to scoop in the middle, about the size of an egg yolk.

  5. Gently place an egg yolk into each hole.bake 2-3 minutesuntil the yolks are just set, or longer, until the yolks are the way you like them.
